I had a craving for a good Greek salad, but wanted to make it at home, so that I wouldn’t have to worry about what to do with the olives. I’m not a big fan of olives, but I always feel guilty if there’s nobody there to eat the nice olives from a Greek salad. I know people who love them, fortunately, so if I happen to be dining out with one of those, then I do not waste the olives. Otherwise, I am left in a small puddle of guilt. Making the salad at home leaves me free to add the ingredients that I like, without any of those others that I’m not so fond of, so I can enjoy the wonderful flavor that is Greek Salad without the guilt puddles. This makes me happy.

So having decided I was going to make a Greek salad at home, I searched and found this recipe for Absolutely Fabulous Greek/House Salad Dressing on All Recipes and was so intrigued. I went to the store to get red wine vinegar, thinking I had the rest of the ingredients on hand already. But I was wrong. I had no Dijon mustard in my house! It made me sad to discover this, but not sad enough to go straight back to the store. It took me another week before I got the Dijon mustard. And then we had a Renaissance festival we had to go to. The only things at the festival to eat were either turkey legs (which were marvelous) or fried food (which makes me sick), so by the time we got home after a long day of festival-ing, I was starved for some vegetables and decided it was time to make my marvelous Greek salad.

It could be that this salad is absolutely fabulous, as I have claimed it to be, or it could be that I was famished, but I believe it is most likely absolutely fabulous even if you are not famished. I’ll try it again when I’m not famished another day. Today I am again, famished, and am contemplating making my fabulous Greek salad all over again. It is just the thing to revive you after a long day of shouting and cheering for all the performers, shopping and buying loads of lovely dragons and trinkets and things, listening to off-color jokes, and general merry making in slightly uncomfortable but very fun festival garb.

I promise I shall blog about something besides vegetables soon. Today, I am reveling in vegetables and very ready to enjoy another Greek salad. I hope you are too!

Absolutely Fabulous Greek Salad

  • Prep Time: 15 minutes
  • Total Time: 15 minutes
  • Yield: Enough dressing for about 10 servings

Ingredients

Absolutely Fabulous Greek Salad Dressing:

  • 1/2 cup extra virgin olive oil
  • 1 1/4 teaspoons dried basil
  • 1 1/4 teaspoons dried oregano
  • 1 1/4 teaspoons granulated garlic (or 1 clove fresh garlic, chopped plus 1/2 teaspoon granulated garlic)
  • 1 teaspoon fresh ground pepper
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon dijon mustard
  • 2/3 cup red wine vinegar

For the salad:

  • Romaine lettuce, cleaned and chopped
  • Cucumber, chopped
  • Fresh, sweet cherry tomatoes, halved
  • Sweet or bell pepper, (fresh or roasted), chopped or sliced
  • Feta cheese cubes, crumbled over top (even better with marinated feta)
  • Optional: red onion slices, Greek olives, fresh basil leaves and/or pickled pepperonci peppers

Instructions

  1. Stir together the olive oil with the rest of the ingredients except the vinegar. Stir to mix well. Whisk in the red wine vinegar.
  2. Fill your bowl most of the way with lettuce. Toss with cucumber, tomato, and peppers and optional add-ins. Toss it all with some of the dressing. Sprinkle with feta and garnish with fresh basil leaves.
  3. Pour the rest of the dressing in an airtight jar or bottle. Store in the fridge.

You’ve been on a roll this week with some very good recipes. Love your blog!
So excited about the dressing for this Greek salad, must be nice and vinegary with more vinegar than oil.

Wow, this salad looks fabulous! I love all of the colors and textures. Also, I am not a huge olive fan, so I love that they’re optional on your version. Can’t wait to make this. I have added it to my Yummly recipe box. Thanks!
