Apple Pie Cinnamon Rolls ~ Sumptuous Spoonfuls #breakfast #recipe

It was the morning after the teenage birthday party sleepover, all the girls were sleeping except one early riser. We talked for a while, but then she settled into drawing … SO like my daughter!


I turned my thoughts to what to serve for breakfast. This was not something we’d planned ahead of time. I decided I needed to make something delicious, sweet and yet a little bit healthy for the girls for breakfast.  Since I was thinking something cinnamon-roll-ish, I needed to get started so they would be ready when the (rest of the) girls got up. I decided on apples because my daughter loves apples.

I got a big hug from my girl for making these.

For the drizzle, I thinned some leftover Heavenly Cream Cheese frosting I found in my fridge.

Apple Pie Cinnamon Rolls

  • Prep Time: 30 minutes
  • Cook Time: 2 hours 30 minutes
  • Total Time: 3 hours
  • Yield: About 20 small cinnamon rolls 1x

Ingredients

For the dough:

  • 3 Tablespoons melted butter
  • 3 cups bread flour
  • 1 Tablespoon active dry yeast
  • 1 cup white whole wheat flour
  • 1/3 cup sugar
  • 1 teaspoon cinnamon (I used Ceylon cinnamon)
  • 1/4 teaspoon nutmeg
  • 3/4 teaspoon salt
  • 1 egg
  • 1 cup water

For the filling:

  • 3 apples, peeled & cored
  • 1/3 cup sugar
  • 1 Tablespoon butter
  • 2 teaspoons cinnamon
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon ginger
  • 1/8 teaspoon allspice

Instructions

  1. Put the dough ingredients in your bread machine and set it on the dough setting.
  2. While the bread machine is doing its work, prepare the feeling: put the apples, sugar, butter and spices in a medium mixing bowl and microwave on high for 2 minutes. Stir. Microwave another minute or two or until the apples are tender and stir again. Set aside to cool.
  3. When the dough is ready, cut it into fourths and shape each piece of dough into a rectangular shape. On a clean, floured surface, roll the pieces of dough out into rectangles. Cover with a clean towel and let them sit for 5 – 10 minutes, then roll each one again to get a thinner piece of dough, covering it back up with a towel when it’s finished.
  4. Preheat the oven to your lowest setting (mine is 170 F), then turn the oven off. This will provide a nice warm place for the dough to rise. Butter or spray a baking dish with cooking spray.
  5. If your dough isn’t nicely rectangular, pull and stretch gently with your fingers to get it more rectangle shaped.
  6. Take some of the liquid from the apple mixture and brush the dough with it, then spread about 1/2 cup of the apples over the dough. Roll it up into a log and pinch the edges to seal.
  7. Wrap a piece of dental floss around the dough, crossing on top, and pull the ends to cut the log of dough into individual rolls. Set the rolls in your baking pan, leaving some space in between for them to rise.
  8. Repeat with the rest of the rolls. Spray with cooking spray (or brush the tops lightly with butter), then set in the oven, cover with a clean towel, and let rise for about 45 minutes.
  9. When the rolls are nice and puffy, take the towel off of them and set the oven to 375 F. Bake for about 30 – 35 minutes or until they are cooked in the middle and nicely golden brown on top. If they start to brown too much, put a piece of foil on top for part of the cooking time.

Notes

Cook time is approximate and includes rising time.
