Apple Pie Wontons {Baked ~ Low Sugar}

If you have an apple, a few spices and some wonton wrappers, you can make these simple little apple pie wontons in about 30 minutes. I created these for my daughter … she loves apple pie, but her doctor told her to cut out sugar from her diet, so I thought I would try making her some “pies” with eggroll wrappers and the NuStevia stevia drops I won recently from Amee’s Savory Dish and NuNaturals.


The first few times I made these, I made them as handpies with eggroll wrappers, which works well, but then I had the idea to make mini-sized ones and my daughter just loved that idea because she loves anything mini-sized. Gee, I wonder where she gets that?

They came out nice and crispy, just like real wontons, but with a sweet apple pie filling. A healthy, simple breakfast or snack. I have doubled the recipe with good luck, so if you want more than just a little snack, you could certainly double or triple the recipe!

You could use brown sugar in place of the stevia if you aren’t worried about sugar (start with a teaspoon or two and add more to taste). And then dip them in caramel sauce or dust with powdered sugar … my daughter likes them without any of that, which is good, because I cannot think how I would make a caramel sauce sugar free …

Apple Pie Wontons {Baked ~ Low Sugar}

  • Total Time: 30 minutes
  • Yield: 8 wontons 1x

Description

A healthy, tasty snack that’s fun, low in sugar, and low in fat.


Ingredients

Scale
  • 1 apple, peeled, cored, and chopped (about 1 1/2 cups)
  • 1 teaspoon maple syrup or honey
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • a pinch of allspice
  • a pinch of cloves
  • 14 drops of liquid stevia (I used NuNaturals vanilla flavored drops)
  • 1/4 teaspoon real vanilla extract
  • Juice from a lemon wedge
  • 1 teaspoon flour
  • 1 teaspoon butter
  • 8 wonton wrappers (or 2 egg roll wrappers, cut in fourths)

Instructions

  1. Peel, core, and chop the apple. Place the chopped apple in a microwaveable bowl, add the maple syrup, and sprinkle with the spices. Stir to coat all the apples with spices.
  2. Add the stevia drops, vanilla, and squeeze the juice from the lemon into the bowl. Stir again, then sprinkle with flour and stir. Add the butter on top of the apple mixture.
  3. Microwave on high for 1 minute. Take the bowl out and stir. Microwave for another minute. The mixture should resemble apple pie filling now; if it’s not cooked enough, put it back in the microwave for another 30 seconds.
  4. Take each wonton wrapper and put a spoonful of apple pie filling on one side, dip your finger in water and wet two edges of the wonton wrapper.
  5. Fold over half of the wrapper to make a triangle shape.
  6. Press the edges together to seal them. Repeat until all the wrappers are done. Don’t fret if some of the wrappers get small tears in them as you’re making these … the filling is thick enough that it really won’t matter.
  7. Spray a baking sheet with cooking spray and arrange the wontons on the baking sheet, leaving a little space in between the wontons. Spray the wontons with cooking spray and (if desired), sprinkle them with cinnamon sugar.
  8. Bake at 350 for about 8 -10 minutes or until the wontons are nicely brown and crisp on the outside. Let cool for just a few minutes before eating.

Notes

I have doubled this recipe with good results, so if you want more than a little snack, feel free to double or triple the recipe! You will just need to microwave the filling a few minutes longer.
