When you’ve got only a few minutes to cook or you just want something quick and hot for breakfast, there’s nothing quite like a nice bowl of steamy oatmeal. This one is especially good if you have over-ripe bananas on your counter that really need to be used in some fashion and you just don’t have the time to bake banana bread. Yes, you can freeze those bananas, but it’s just as easy to transform one into a warm, comforting bowl of goodness.


I used maple syrup in this one and really loved the maple taste with the banana. If you don’t have maple syrup, substitute honey or brown sugar. It will be just as good. I’ve made this before with just stevia, banana and a touch of sugar and it was wonderful like that. An extra indulgence is to toast the nuts while you’re cooking the oatmeal and toss them on at the end, all hot and fragrant. That makes it all the more satisfying.

It’s all done in just 5 minutes.

Banana Maple Nut Oatmeal

  • Prep Time: 2 minutes
  • Cook Time: 3 minutes
  • Total Time: 5 minutes
  • Yield: 1 serving 1x

Ingredients

Scale
  • 1/21 very ripe banana
  • 1/4 cup quick-cooking oats
  • 1/4 cup water
  • 1/4 cup milk (I used coconut almond milk)
  • 12 teaspoons maple syrup (or to taste)
  • 1 teaspoon vanilla extract
  • a pinch of salt
  • 2 Tablespoons toasted walnuts, roughly chopped

Instructions

  1. Mash the banana in a microwave safe bowl. Add the rest of the ingredients except the nuts. Stir and microwave on high for 1 minute. Stir again and microwave 1 minute. If the oatmeal is still not done to your liking, cook it a little longer.
  2. Add stevia (or your sweetener of choice) to taste. Sprinkle with nuts and garnish with a few banana slices (if desired). Enjoy while it’s still hot!
