Basil Garlic Goat Cheese Schmear

Fresh herbs and goat cheese are just wonderful together. Add in a bit of garlic and it’s pure heaven. If you can get your hands on some fresh basil, you really must give this super-simple 5-minute recipe a try.


It has been a super busy week for me this week. I just started a new job on Monday and it seems like I’ve barely been home all week! Of course, it didn’t help that we were planning to travel to a dance workshop for my daughter on Friday afternoon. I got to Thursday night and thought “what the heck am I going to bring along for food? I’ve had NO time to cook this week at all!” … I had just packed up my clothes for the trip and it was bedtime, but I wanted something delicious to bring along on our road trip. When I’m travelling, even if there are good restaurants about, I always want hunger for something delicious from my own kitchen.

I had some goat cheese in my cheese drawer and remembered how we used to go to wine festivals with our winery friends and we would trade a bottle of wine for this oh-so-delicious herbed goat cheese. I decided to try my hand at replicating this amazing spread. It took me all of five minutes to do and I trimmed my basil plants in the process! (They SO needed it!) This schmear goes SO well on crackers with a nice glass of wine. I stuffed a couple bottles of wine in my suitcase, slipped some crackers in the “snack bag” and stuck this in the cooler to travel with us. It does taste just like the herbed goat cheese from the wine festivals that I remember.

Now I’m kinda wondering: How would this taste crumbled on a salad? Hmmm …

Basil Garlic Goat Cheese Schmear

  • Prep Time: 5 minutes
  • Total Time: 5 minutes

Ingredients

Scale
  • 12 cloves of garlic, peeled and chopped fine
  • 1 8-oz. package of goat cheese
  • About 3 tablespoons of fresh basil leaves and/or flowers, chopped fine (I used a mix of green and purple leaves)
  • A few other fresh herbs: rosemary, thyme, oregano

Instructions

  1. In a small bowl, mix together the garlic, goat cheese, and fresh herbs until well mixed. (If the goat cheese is giving you any trouble, try microwaving it for about 30 seconds to soften it up a bit.) Put the spread in a covered container and refrigerate until serving time. This schmear is best if made an hour or more before serving so the flavors have to time to permeate through the goat cheese. Serve with crackers or crudites.

Yes, it is a plastic knife … you have to make do sometimes when you’re travelling!
