I hear the latest craze in cocktails is the Moscow Mule. It’s served in a cute little copper mug and has become so “hip” that some of the bars have started taking a deposit if you order one (to reduce the number of copper mugs disappearing!) I didn’t really know any of this until my friend ordered one the other night at our after-yoga outing that we fondly refer to as “Wino Wednesday” and she let me have a little sip of hers. Oh my, it was WONDERFUL! And then our younger yoga friend who knows way more about “the scene” than me told us the story of the mugs disappearing in the bar and where to find some copper mugs for only  $12 each.


The funniest thing about this situation is I had some ginger beer at home that I’d bought a while ago for one of my daughter’s parties that I had let sit for quite a while without even tasting it. My daughter and her friends had tried it and told me they didn’t like it. For those of you who don’t know, ginger beer has no alcohol in it and tastes nothing like beer. It’s an intensely ginger, fizzy soda that is expressly for fanatics of ginger. Think root beer, except with an extreme ginger twist. I can’t believe I had this deliciousness in my house for so long and never ventured to try it!

This Mexican Mule cocktail is a spinoff to the Moscow Mule made with blueberry infused tequila, which is made simply by putting some blueberries in a jar, filling with tequila and letting it sit in a dark place for a few days. I’m not sure it makes much difference that the blueberries are there, though, because the intense ginger flavor does really take over, but the blueberries do make a nice little “snack” with your cocktail, especially if you let them take a dip in that yummy ginger beer.

Blueberry Mexican Mule

  • Prep Time: 5 minutes
  • Total Time: 5 minutes

Ingredients

Scale
  • Several blueberries
  • 12 wedges of lime
  • 12 shots blueberry-infused tequila (or just use your favorite tequila)
  • Ginger beer
  • For garnish: extra blueberries and a slice of lime

Instructions

  1. In a copper mug or glass, muddle together the blueberries and lime with a wooden spoon. Add ice, tequila and a goodly amount of ginger beer.
  2. Garnish with a wedge of lime and/or some blueberries on a toothpick and enjoy!
