This breakfast sandwich is akin to an Egg McMuffin … except it’s eons better. Egg, bell pepper, onion, bacon, and tomato with melted pepper jack cheese on a toasted English muffin.


I seriously needed some protein this morning. Either I didn’t eat enough yesterday or our yoga teacher must have worked us harder than I realized last night because I woke up this morning absolutely STARVING. By the time I’d taken my daughter to school, I was almost weak with hunger and I knew I needed something really hearty, but I also wanted some vegetables and bread and I needed to get it in my stomach FAST. Breakfast sandwich time!

I inhaled this sandwich and now my body feels so much better! I’m all fueled up for the morning … and my taste buds are happy too 🙂

Breakfast Sandwich Supreme

  • Prep Time: 5 minutes
  • Cook Time: 10 minutes
  • Total Time: 15 minutes
  • Yield: 1 breakfast sandwich 1x

Ingredients

Scale
  • 1 egg
  • 1 Tablespoon water
  • About 1 1/2 Tablespoons of each: chopped onion, bell pepper, fresh tomato
  • 1/21 slice of lean bacon, cooked & crumbled
  • A couple slices of pepper jack cheese
  • 1 english muffin

Instructions

  1. In a bowl, whisk an egg with the water and sprinkle with salt and fresh ground pepper.
  2. Heat a frying pan or omelet pan over medium heat and if needed spray with cooking spray. Sautee the onion and pepper briefly, then pour over the egg and sprinkle with tomato and bacon. Try to “fold” the egg up as it cooks so it is about the size of your English muffin. Mine was more like stuck together scrambled eggs, but hey, it worked!
  3. Lightly toast one half of the English muffin and set it on a baking sheet. Place the cooked egg mixture on it. Top with slices of cheese. Bake at 400 or broil until the cheese is melted and bubbly.
  4. While the cheese is melting, toast the other side of the English muffin.
  5. Remove the cheesy half from the oven, slide onto a plate, top with the other half, and enjoy!
