Chocolate Porter Sauce ~ a rich, decadent chocolate sauce with rum barrel coconut porter from Sumptuous Spoonfuls for #Choctoberfest

A rich, decadent chocolate sauce laced with a deep dark barrel aged craft beer: namely the Central Waters Rum Barrel Coconut Porter, which is deep and dark and aged in a rum barrel with hints of coconut and cola. It has an alcohol content of 12.5%. (Yeah, that’s pretty high for a beer! It’s even higher than many wines.) This beer is like the double rum coke of beers. It’s so intense in flavor that I actually couldn’t drink the whole bottle. You guys, that NEVER happens. I drink deep, dark beers all the time, usually the biggest size I can order. But not this one. I drank about half of the bottle and then I was done. I was totally satisfied and I didn’t want any more. But I didn’t want to waste it either … I mean this is a seriously delicious beer! Maybe I could cook something with it? I put a cork in the bottle and stuck it back in the fridge until I figured out what to do with it.


It wasn’t too long until I ran across this recipe from Work Cook Eat. And I knew I had found the perfect use for my special porter. I’m a HUGE fan of hot fudge sauce … and ever since I made that Bailey’s Hot Fudge Sauce, I knew that hot fudge sauce made with alcohol is about a gazillion times better. So fudge sauce made with a rich, rum-barrel aged, high alcohol content porter should be amazing, right?

Okay I’m done yelling at you … let’s talk about chocolate sauce. So, it turns out that chocolate sauce made with a rich, dark, barrel aged, high alcohol content Rum Barrel Coconut Porter is oh my gosh ah-mazing. This chocolate sauce isn’t as thick as my Bailey’s fudge sauce, but I didn’t mind one bit. It might be the beer talking, but I think maybe I love this chocolate sauce even more.

In case you don’t have this Rum Barrel Coconut Porter where you live, substitute any thick dark sweet stout or porter. Choose something that has notes of coffee or chocolate (or coconut!). It should be really dark in color. Like black or dark dark brown. A milk stout or cream stout would be excellent, especially if it’s barrel aged. The really cool thing is you aren’t going to use the whole beer in your sauce, so you get to drink some beer too! I love recipes like that …

It’s the most grown up way to make chocolate sauce. And probably the most delicious too. This chocolate stout sauce is SO good y’all. It’s not as cloyingly sweet as the stuff you buy at the grocery store, it’s dark and rich. It doesn’t scream beer at you either, it’s just a little malty and warm. It’s grown up and sophisticated. AND YOU CAN MAKE CHOCOLATE MILK WITH IT.

Um yeah, you totally can make chocolate milk with it! But I prefer to drizzle it over ice cream. Especially over boozy chocolate fudge ice cream, because yeah, sometimes one dose of chocolate just isn’t enough. I’m kind of a serious choco-holic.

I hope you’ve enjoyed this week of #Choctoberfest … I sure have! It was a LOT of work, but a lot of fun too.

Chocolate Porter (or Stout!) Sauce

  • Prep Time: 10 minutes
  • Cook Time: 15 minutes
  • Total Time: 25 minutes
  • Yield: About 1 cup of chocolate sauce 1x

Ingredients

Scale
  • 1/2 cup barrel aged porter or cream stout (I used Central Waters Rum Barrel Aged Coconut Porter)
  • 1/2 cup whipping cream or half & half (or fat free half & half … or a mix of the two)
  • 2 Tablespoons butter
  • 8 oz. good quality dark or semi-sweet chocolate chips (about 1 1/2 cups)
  • 1/4 cup Imperial sugar
  • 1 teaspoon vanilla
  • A pinch of salt

Instructions

  1. In a medium saucepan over medium-low heat, add the ingredients and stir.
  2. Stir as the mixture warms, then, as the chocolate melts, use a whisk to ensure everything is nicely mixed.
  3. Continue whisking until the butter and chocolate are fully melted and incorporated into the sauce. Drizzle warm over ice cream, cake, yogurt, fruits or other desserts, or stir into coffee, chai or milk. Store in a sealed jar in the fridge for up to a month or more. Warm before using.

Notes

To warm the cooled sauce, set the jar in the microwave and microwave on high for 30 seconds. Stir and if the sauce isn’t warmed yet, microwave another 30 seconds and stir some more.

Wondering if when it says Imperial sugar you are saying just coarse white sugar, or powdered sugar. I know the brand imperial but wondering about texture

Hi Nicole,

Sorry for the confusion! It’s simply plain white sugar, not powdered sugar. Since Imperial gave me the sugar, I had to include the brand in my recipe.
