Cilantro Avocado Sweet Pea Dip ~ Sumptuous Spoonfuls #easy #green #healthy #dip #recipe #StPatricksDay

It’s only two days until St. Patrick’s Day and I think we need more GREEN things in our lives, but oh please, let’s celebrate nature’s version of green (not the food-coloring green). This vibrant green dip is made of … yes, peas! Those lovely little round balls of green. And cilantro! One of my very favorite herbs. Because why not blend up some peas with cilantro and garlic, greek yogurt and other yumminess and make a fabulous dip out it?

Pi Day was yesterday. I love all the holidays in March and my kids and I have traditions to celebrate both Pi Day and St. Patrick’s Day. In between there lies today … the Ides of March. “Et tu, Brute?” always echoes in my mind on this day. The words of betrayal, in between two fun frivolous holidays.

It is so like life, where you’ll be sailing along, being silly (and perhaps a mathematical foodie geek on Pi Day … or whatever … thinking everything is just wonderful and full of bliss) and then suddenly, something drops on your life that sobers it. Perhaps a betrayal or leaving. Maybe an illness or a death or an accident. Perhaps a broken promise. I’ve had some of those drop on me lately. Not today, not yesterday, but not long ago either.

Somehow you need to get past this day. This trying time. And move on to the next moment of joy and happiness. How, how, how to do that? It is so hard to move on. I cry and mourn when stuff like this happens, but I also try to treat each moment like this as an opportunity for rebirth  … an opportunity to learn. And to find my inner strength.

Today I made an offer on a second house, a vacation home. Why, why did I do this? It is terrifying to me to have the burden of two house payments …  but I need to move forward, onward, to the next chapter in my life. I’m honestly not sure whether I will retire there. It’s a beautiful space, but is it where I want to be? I don’t know. But I know that this space is calling to me right now, and I feel like by renting it out part of the year, I can make this work. And I foresee some very fun and meaningful times there, opportunities to bond with my friends and family and also to learn and grow and make new friends, friends that will help me make the upgrades and changes that need to happen in this space–and to help them in the process. So I’m going for it. It’s a rebirth in a way, it’s an opening. It is looking towards the future, too, when maybe I’ll need to care for one (or both) of my parents. There is space for them in this house.

Oh but I soooo digress. Sorry to get so deep on you. I’ve been doing a lot of soul searching lately. Let’s talk about dip. Because dips are just the thing for soul-searching missions, when you’re uncertain and you need something to comfort you. A really good dip is cozy, inviting and yes, it answers that deep need inside with a nice tasteful, little bite. There’s something about a good dip that just makes me feel better about life.

This creamy, lightly sweet and healthy, creamy dip is definitely something I’ll serve in my new home. It tastes fantabulous to me–I was absolutely delighted when I first whipped it up and I’m still entranced by it. You can serve it with crackers or veggies or even a more sturdy chip. I can also imagine this would be a scrumptious spread for a sandwich or wrap.
