Double Mushroom Cheeseburgers

Flavorful garlic red wine sauteed mushrooms are tucked inside of these juicy double mushroom burgers, then topped with more mushrooms, melty swiss cheese, caramelized onions and a bit of tangy sweet barbeque sauce, these burgers are a little taste of heaven for any mushroom lover.

FYI: these scrumptious burgers are part of a fan-frickin-tastic month-long event hosted by Girl Carnivore. I’m super excited to be joining in with so many other talented bloggers sharing their creative burger talents this month. Especially in this time when so many of us are having to cook our own food at home (when normally we might go out for burgers), I feel like it’s high time to share some recipes for some EPIC burgers you can make at home.

Double Mushroom Cheeseburgers

The story behind this burger: ever since I made my mushroom meatballs, I’ve wanted to try making cheeseburgers using a similar technique. Adding sauteed mushrooms into the ground beef just makes so much sense in my mind. Mushrooms have a good, earthy, meaty texture, SO much good flavor and, when you chop them real fine, they even LOOK like meat. So why not use mushrooms to extend your ground beef? Especially if you’re running low on ground beef.

I love me a good burger, but I love the toppings on the burgers just as much as the meat, so I shaped my burgers a little smaller and thinner. If you want a thicker meatier burger, make 2 or maybe 3 burgers out of the mushroomy meat mixture (depending on how much meat you decide to add). I made 4 smaller me-sized burgers, just perfect for an abundance of toppings. That’s how I roll, but please, adjust the size of the burgers for how YOU roll.

You can make your own buns or use store bought ones: your choice. If you want to make your own buns, I have two recipes for brioche burger buns that are pretty dang epic on their own:

And now for the moment (I hope) you’ve been waiting for: the recipe for these epic double mushroom cheeseburgers. Since many of us are quarantined at home right now, I purposefully made the portions smaller. Feel free to scale it up if you have more mouths to feed.

Double Mushroom Cheeseburgers

Flavorful garlic red wine sauteed mushrooms are both inside and atop these juicy double mushroom burgers. With melty swiss cheese and caramelized onions and a bit of tangy sweet barbeque sauce, these burgers are a little taste of heaven for any mushroom lover!


Ingredients

Scale

For the garlic red wine sauteed mushrooms:

  • 1/2 Tablespoon butter or olive oil
  • 8 oz. fresh mushrooms, sliced
  • 4 cloves garlic, peeled & chopped
  • 2 Tablespoons red wine
  • 1 Tablespoon soy sauce
  • A sprig of fresh thyme leaves (or a sprinkle of dried thyme)
  • A small sprig of fresh rosemary or several basil leaves, finely chopped
  • Salt & freshly ground pepper, to taste

For the onions and burgers:

  • 1/2 Tablespoon butter or olive oil
  • 1 large sweet onion, peeled & sliced thin
  • 48 oz. ground beef 
  • Salt & freshly ground pepper

For serving:

  • Slices of swiss cheese (or Dubliner Irish cheese)
  • Toasted brioche buns (I used this recipe)
  • Sweet tangy barbecue sauce (or condiments of your choice)
  • Baby arugula, mixed greens or other lettuce

Instructions

  1. In a medium frying pan over medium heat, melt 1/2 Tablespoon butter, then add the garlic and stir briefly until fragrant. Add the mushrooms, wine, soy sauce, herbs and sprinkle with salt & freshly ground pepper. Stir, then cover and cook for several minutes, uncovering to stir and check the mushrooms. When they are soft and tender, give them a taste and add salt & pepper (or other herbs) as desired.
  2. Remove the onions from the pan and add another 1/2 Tablespoon butter. Add the onion and saute until starting to brown and caramelize, stirring frequently. Remove the onions from the pan. Some butter might remain. If not, add a bit more butter to the pan for frying the burgers.
  3. Put half the mushrooms and about 1/3 of the sauteed onions in a mini chopper and process until finely chopped (or chop by hand). In a medium mixing bowl, mix the mushrooms and onions with the ground beef. Form into 2 – 4 patties and sprinkle each patty on both sides with salt & pepper. 
  4. Cook the burgers in the same pan (to soak up the good flavors) over medium heat until they are browned on both sides and almost done to your liking. Cover each patty with cheese, then cover the pan until the cheese is melted. Toast the buns.
  5. Set each burger on a toasted bun, top with the remaining sauteed mushrooms, sauteed onions and greens of choice. Drizzle with sweet, tangy barbeque sauce (or condiments of choice). Enjoy!
