My Daughter's Favorite Chocolate Chip Pancakes ~ Sumptuous Spoonfuls #easy #fluffy #pancake #recipe

Ever since my girl went to stay with her Auntie Jill a couple years ago, this has been the pancake recipe that has reigned over our household. I tried to remind my sweetie pie of the recipe we made when she was younger that she loved, but she was having none of that. This was the recipe that had to be used, and if mom wasn’t going to make it for her, well then, she was just going to make it herself.


She has a definite process to her pancake making. She makes concentric circles, slowly reduced in sice, so that she can stack them in a HUGE stack, something like this, but much more beautiful.

Finally I relented and started using Auntie Jill’s recipe. Except I started gradually adding in some white whole wheat flour. And somehow it’s become a standard in our house for BOTH of my kids. My boy wants his with breakfast sausage, plain, no chocolate chips. My girl wants hers with (the best quality) mini chocolate chips.  And she is especially delighted if I make mini pancakes with smiley faces, like I used to do for her when she was little.

I am worried about my girl … teeenager-ism has not been easy on her. She is faring WAY better than my boy was at this age, but oh she struggles. Her creative spirit and intelligent mind are clouded, she has little ambition, seems very distressed that she doesn’t know what she wants to do when she grows up and she has so many pains. She is able to get by, most times, although the crazy school environment is incredibly stressful for her introverted personality. There’s a little less than a month left of the school year … fingers crossed she can make it through. I am sure if she can make it through high school, she will find a good place. Hang in there, my dear. Pancakes will be there to comfort you … and mom is totally cheering you on.

Family Favorite Chocolate Chip Pancakes

  • Prep Time: 15 minutes
  • Cook Time: 15 minutes
  • Total Time: 30 minutes
  • Yield: 2 - 4 servings 1x

Ingredients

Scale
  • 3 Tablespoons butter, melted

Dry ingredients:

  • 1 cup all purpose flour
  • 1/2 cup white whole wheat flour
  • 1 Tablespoon sugar
  • 3 2/3 teaspoons baking powder
  • 1 teaspoon salt

Wet ingredients:

  • 2 teaspoons vanilla
  • 1 egg
  • 1 1/4 cup milk (plus a little extra)

Mixins: mini chocolate chips


Instructions

  1. Melt the butter and set aside.
  2. In a small mixing bowl, mix together the dry ingredients, then add the wet ingredients and stir to mix well. Stir in the melted butter, a little at a time, until the lumps are pretty much gone. Add just a little bit of milk if the batter is too thick and stir. Stir in mini chocolate chips to taste.
  3. Heat a nonstick frying pan over medium heat, then reduce heat (if needed) to medium low. Rub a bit of butter over the bottom of the pan, then pour batter in spoonfuls into the pan to make your desired size of pancakes. Let brown on bottom, then flip and brown on the other side. Serve hot.
