This cobbler has almost a cookie-like texture … it’s soft, tender, with sweet fresh strawberries intermingling. It’s the best cobbler I think I have ever had. My little 4 year old niece helped me make it. She “ploppity plopped” the strawberries on top. I love the way she said that.

I found myself at my parents’ place with a big tub of strawberries that were past their prime … my sister had brought fresh berries from her own strawberry patch that were WAY better than the berries I had brought and it was time to DO something with “those” berries to get them out of the fridge.

I opted for a cobbler recipe to “eat up” the strawberries. This amazing cobbler made fast work of the berries … the cobbler was completely polished off in about 15 minutes.  My brother in law gave it an A+ rating. He says he reserves that rating for really really special recipes. I’m not so sure that’s true because he’s always so gracious and appreciative of my cooking, but he’s right. This cobbler is an A+ recipe.

Everyone else who got the chance to taste it loved it too … My only suggestion for improvement is this: if you have a lot of people to feed, make sure you double the recipe. Several of us never got to try the cobbler before it was gone. It went WAY too fast!

Fresh & Easy Strawberry Cobbler

  • Prep Time: 15 minutes
  • Cook Time: 40 minutes
  • Total Time: 55 minutes

Ingredients

Scale
  • 3 cups fresh strawberries, diced
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon lemon juice
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 cup sugar
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 stick butter, melted

Instructions

  1. Preheat the oven to 375 F. Spray a 9-inch casserole or equivalent-sized oven-proof bowl with cooking spray.
  2. Cut up the strawberries and set them in a bowl. Toss the berries with 1/4 cup sugar, vanilla and lemon juice. Set the berries aside.
  3. In a small mixing bowl, mix the flour, baking powder, salt, cinnamon and 1/4 cup sugar. Stir in the milk, vanilla, and melted butter just until mixed. It’s okay if you have a couple lumps in the batter.
  4. Pour the batter into the prepared baking dish and “plippity plop” the strawberries on top. Make sure you pour all the yummy juices on top, too.
  5. Bake at 375 for 35 – 40 minutes or until the cobbler is golden brown on top and nicely cooked in the middle. Test the middle of the cobbler with a wooden pick or knife … it should come out completely clean. If it’s not clean, bake a few minutes longer.

I just made this and it was good but I think I needed more sweetness. It may just be my personal preference because I love really sweet desserts! I may add more sugar next time or even put a sugary glaze on top but it was still delicious!☺️❤️

Thanks for your comment and review! I don’t like things too sweet, so that’s probably why it wasn’t as sweet as you wanted it. I think a sugary glaze on top would be amazing. It’s also great warm with ice cream.
