It was Mother’s Day weekend. My sister and I were heading up to Mom and Dad’s place to celebrate with Mom. I stopped at the greenhouse to get mom some new flowers to plant in her garden … and decided to bring along some margarita fixin’s, because my sis (like me!) loves a good margarita and Mom enjoys having a drink with her daughters. I got there on Saturday. We opened up a bottle of my Dad’s wine … and pretty soon we’d had enough. We decided to nix the margaritas.


Then it was Sunday. Mother’s Day. We were busy making breakfast, which was a healthy bunch of leftover asparagus with some eggs scrambled in along and a bit of cheese. It got to be about 10:00 and my sister says to me: “you know, we’re not going to be driving for a while … and you hauled all that margarita stuff all this way … it would be such a shame if we didn’t have a margarita.” I was a little shocked. “Seriously? It’s 10:00 on a Sunday and you want a margarita?” … she said, “why not?” And my thinking came around to that … indeed. Why not? It’s Mother’s Day. What better way to celebrate?

So I mixed up a batch of these margaritas, which happened to be just enough for the three of us to have a small margarita. My mom said except for the alcohol, it tasted like a dessert. (And who says dessert can’t have alcohol in it? Some of my very favorite desserts contain alcohol!) My sister said the margarita tasted like a smoothie. We all agreed they were awesome as we clicked our glasses together and said cheers and smiled to ourselves for being so healthy.

You can rim the glasses with sugar if you like by rubbing a cut lime around the edge of the glass, then dipping in sugar. We decided these beauties didn’t really need a rim, but it does make the glasses look pretty.

Frozen Banana Mango Margarita

  • Prep Time: 10 minutes
  • Total Time: 10 minutes
  • Yield: 2 - 3 servings 1x

Ingredients

Scale
  • 1 mango, peeled
  • 1 banana, peeled & frozen
  • Juice of 3 limes
  • 6 Tablespoons tequila
  • 2 Tablespoons triple sec
  • 2 Tablespoons agave nectar
  • A few ice cubes

Instructions

  1. Cut the flesh from the mango seed and put in a blender cup. Add the rest of the ingredients and blend until smooth. If a more slushy margarita is desired, add more ice and blend until smooth.
  2. Pour into glasses and enjoy!
