Green smoothie, meet cocktail. I’ve been dying to try cucumber jalapeno margaritas for a long time … or at least it seems like a long time. Perhaps it’s not really all that long. I mean what’s a couple years in the scheme of things? But they’ve intrigued me since the moment I heard of them. Cool cucumbers … with spicy jalapenos … in a limey margarita. Soooo intriguing.


Anyway, tonight I decided it was high time to make this fascination happen. I have a brand new Ninja blender that I won for one of the “health challenges” we’ve been having at work. It’s kind of weird to say this, but the little health challenges they’ve been doing at work have been life changing for me. I have always been a pretty healthy eater and I do exercise regularly, but when they did the #ProjectZero challenge for the holidays, I realized I could make changes in my life to really lose the extra pounds I’d put on as I’d aged. I have totally upped my game. Since the ProjectZero challenge, I’ve changed from 3 days of exercise a week to 6-7 days, some with double workouts. My meals have changed too … I have cut my portions and calories drastically and lost 19 pounds. For my small body, that’s a HUGE change. The challenges at work helped keep me on track with my goals. Fitness challenges and eating healthier challenges and stress relieving challenges. Every single challenge has made a positive impact on my life.

So one of the challenges I conquered incidentally landed me a beautiful new Ninja blender! It’s a super sweet model, with one giant blender cup plus two smaller single-serving ones. The blades on this Ninja are dangerously sharp, so they can blend up things you wouldn’t normally even think of throwing in a blender, like half of a lime.  Which is a really great thing when you’re making a margarita. There’s a LOT of lime flavor in that lime peel. To be able to toss in a chunk of lime instead of having to juice a bazillion of limes … that is game-changing. With health benefits! These margaritas are like an adult smoothie … with a kick. I was full after drinking one of them. And smacking my lips because they were still tingling from the jalapeno and the delicious flavors.

Frozen Cucumber Jalapeno Margarita

  • Prep Time: 10 minutes
  • Total Time: 10 minutes

Ingredients

Scale

For each margarita:

  • 1 shot tequila
  • 1/2 shot triple sec
  • 1/2 of a lime
  • 2 1-inch segments of cucumber
  • 12 couple slices of jalapeno
  • 2 Tablespoons agave nectar
  • Ice, to taste

Instructions

  1. Put all ingredients in a Ninja (or other powerful blender) and blend until no chunks remain. (You need to blend really well to fully process the lime.) Taste and add ice if needed to thicken the margarita and blend some more.
  2. Pour this frozen deliciousness into a glass rimmed with coarse salt, garnish with lime or cucumber slices and enjoy!
