Did I tell you about my friend’s pear tree? While we were at the lake last weekend, the kids and I noticed this pear tree that was just LOADED with pears right at the edge of my friend’s yard. We thought oh it is probably the neighbor’s tree, but when we asked my friend about it, she said it was hers. That got us all excited because there were so many pears! My friend said I could take some home as long as I left some for her and give some to her neighbor. That was no problem … there were so many!

They weren’t ripe yet (which was lucky because I had no time to do anything with them yet either!), so I put them in a bag to ripen and waited till this weekend to get started playing with pears.

So yesterday I had an apple & pear party on my facebook page. All my foodie friends came over with their apple & pear recipes and one of them was this one. I knew as soon as I saw it that I wanted to make it. So this morning I made it for breakfast. My daughter wasn’t too pleased when I told her it was baked oatmeal, but she ate it and even admitted it was good. I had a nice bowlful, too, and am saving the rest for breakfasts this week.

Ginger Apple Pear Crisp Baked Oatmeal

  • Prep Time: 20 minutes
  • Cook Time: 40 minutes
  • Total Time: 1 hour
  • Yield: 8 - 12 servings 1x

Ingredients

Scale
  • 35 cups diced apples & pears, skin may be left on (I peeled mine)
  • 2 cups old-fashioned oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/3 cup maple syrup or honey
  • 2 cups milk (any kind will do)
  • 1 large egg
  • 1 tablespoon pure vanilla extract
  • 1 teaspoon freshly grated ginger root
  • 2 tablespoons melted butter or coconut oil
  • 2 Tablespoons raw (turbinado) sugar
  • 1/4 cup chopped walnuts or pecans

Instructions

  1. Preheat the oven to 375 F. Spray a 13x9x2 inch pan with cooking spray (or butter it).
  2. Prep the apples and pears and spread half the fruit in the bottom of the pan.
  3. In a medium mixing bowl, mix the oats, baking powder, spices, and salt. Sprinkle the oat mixture over the fruit.
  4. Now take the bowl and whisk together the maple syrup or honey, milk, egg, vanilla and ginger until everything is well mixed. While whisking, pour the butter in a thin stream into the mixture (this will keep it from congealing).
  5. Sprinkle the top with raw sugar and nuts and bake for about 40 minutes or until the oatmeal is set.
  6. Eat warm & fresh from the oven, or cover and refrigerate for later.

Notes

I used 4 small apples and 4 pears which I think was about 5 cups of fruit.
