This is a recipe someone shared on my facebook page … and I was intrigued. One night when my daughter was cooking up some rice for another dish, I said to her “let’s make a double batch … I have a recipe I want to try” … and we did. I didn’t have time (or the tomatoes!) to make my Greek rice salad that night, so I stuck the rice in a container for another day.

But then I visited the land of plenty (a.k.a., my parents house) and came back with a BIG box of tomatoes and a cooler full of cucumbers. And somehow, as soon as I walked in the house, I realized I was starving. I remembered the rice salad, found the recipe and began.

I quickly discovered it’s a very forgiving salad. The amounts that you put in don’t matter so much. You can throw in extra rice, or cucumber, or tomato, and it all seems to work out just fine. I didn’t have as many artichokes as the recipe called for, so I put artichoke marinade in the dressing to boost the artichoke flavor. I also left out the olives because I have never been fond of olives, but you can certainly throw in olives if you like them.

Greek Rice Salad

  • Prep Time: 20 minutes
  • Total Time: 20 minutes
  • Yield: 4 - 6 servings 1x

Ingredients

Scale
  • 4 cups cooked, cooled rice (I used Basmati)
  • 1 1/2 large English cucumbers, chopped (about 3 cups)
  • 2 large tomatoes, chopped (about 2 cups)
  • 1 medium sweet onion, chopped (about 2/33/4 cup)
  • 2/31 cup chopped marinated artichokes
  • 1/4 cup chopped parsley (or 1/4 cup chopped basil)
  • 1/2 teaspoon dried oregano
  • Juice of 1 lemon
  • 2 Tablespoons of the artichoke marinade
  • 34 oz. feta, crumbled
  • Roasted, salted sunflower seeds

Instructions

  1. Mix all ingredients except the feta in a medium mixing bowl. Top with crumbled feta.
  2. Serve immediately or store in an airtight container in the fridge.

Notes

Add quartered or sliced olives if you like! I don’t care for them, so I left the olives out.
