When I first made that fabulous coconut pineapple mixer to make my Hawaiian Fizz cocktail, I didn’t realize just how MUCH mixer it makes! I made drinks for everyone at my Hawaiian Luau cooking class, but still I had a lot left. I made Hawaiian fizzes for my yoga friends and still I had more. I made myself a pina colada. Still I had mixer left. I was sooo curious how it would taste in a Mojito, and finally, I got the perfect opportunity to try it. It’s Friday, it’s Jazz Fest today, and I’m in the mood to party. I have just a little bit of time at home before I go out to the festival, just enough time for a cocktail.


I mixed up the perfect tropical mojito, took a little sip, then attempted to carry it out on the tray to the patio for a photo. The heavy pineapple I put on the tray tipped over, and then the drink did too! Argh … back to make another. Fortunately, I have plenty of ingredients on hand. There is definitely no shortage of mint in my house. And it’s starting to bloom, so there will be even more. I’m grateful that it is “contained” to my small front garden by the mailbox.

It’s a beautiful summer evening … I can’t wait to get out to the festival. All my friends will be there, but I am not sure if I’ll find them. It’s a very crowded event, and with this weather, I’m sure the whole city will be there.

Hawaiian Mojito

  • Prep Time: 10 minutes
  • Total Time: 10 minutes
  • Yield: as many as you like!

Ingredients

Scale

For the coconut pineapple mixer:

  • 1 22-oz. container of coconut cream (such as Coco Lopez)
  • 1 12-oz. can of frozen pineapple juice concentrate
  • Juice of 12 limes or lemons
  • 1/2 cup water
  • 1 14-oz. can light coconut milk

For each mojito:

  • Several fresh mint leaves
  • 1 lime
  • 1 shot coconut rum
  • 1 shot pineapple coconut mixer
  • Ice
  • Club soda (or a tropical flavored sparkling water such as lime, mango or coconut LaCroix)

For garnish: pineapple, lime, fresh mint leaves


Instructions

  1. Make the base mixer by blending together the coconut pineapple mixer ingredients.
  2. In each mojito glass, put several fresh mint leaves in the bottom of the glass and squeeze the juices of a lime over. Muddle with a muddler or spoon to release the flavors of the mint. Add pieces of the lime so the oils from the rind will infuse into the drink.
  3. Pour in 1 shot of coconut rum, 1 shot of the pineapple coconut mixer. Add ice to fill the glass, then top with club soda to fill the glass. Garnish as desired and enjoy!

Where can I find pineapple concentrate or what can I substitute it with

Hi Laura,

In the freezer section of your grocery store, you can find juice concentrates. It should be with the frozen concentrated orange and apple juice. You could substitute pineapple juice, but you won’t have as much sweetness or concentrated pineapple flavor.
