This was one of those recipes I thought of and stored in the back of my mind. I ended up making the recipe at my parents’ house. They have a big garden with lots of fresh herbs, so I had plenty choose from. I went out to make my selection: hmmm, dill, oregano, a few basil leaves, some tarragon, a bit of oregano and cilantro. Yes.

Then from my parents’ house, my cheese spread travelled with us to Winnipeg for the Folklorama Festival. The festival is an International festival featuring shows, food and culture exhibits at 48 pavilions around the city. My parents took me to this festival when I was a young girl and I decided my daughter needed to experience this too. The only problem is she is a teenager and tends to sleep a LOT, and I, on the other hand, wake up early and want to go DO stuff! So here I sit, in the hotel room, taking photos of my cheese spread, and feebly attempting to wake my girl to make a trip to the art museum, and perhaps we can go to the sculpture garden later and listen to some jazz in the park.

The little heart-shaped bowl I found at the farmer’s market we went to yesterday. A wonderful potter named Gabrielle from Portage la Prairie, MB, made it. I love her pottery and had SUCH a hard time settling on which piece(s) to get. I settled on three of the heart-shaped bowls, but was very tempted to buy one of her “everything” bowls too, which come with a flat handle that rests nicely on the hand for carrying. I did grab her card, so in case I decide I really must have one, I can contact her.

Herbed Bacon Sundried Tomato Cheese Spread

  • Prep Time: 15 minutes
  • Total Time: 15 minutes

Ingredients

Scale
  • 3 oz. chevre (goat cheese)
  • 3 oz. light cream cheese/greek yogurt mix
  • 23 Tablespoons fresh herbs (I used dill, cilantro, tarragon, oregano and basil)
  • 2 Tablespoons cooked, crumbled bacon
  • 2 Tablespoons sundried tomatoes

Instructions

  1. Soften the goat cheese and cream cheese in the microwave for 30 seconds.
  2. Put the cheeses with the herbs, bacon, and tomatoes in a food processor or handi chopper.
  3. Process until everything is chopped and mixed well. Use as a spread on crackers, sandwiches, wraps or crusty bread–or use it to add flavor to omelets, potatoes, chicken or other savory dishes. Or mix it with some Greek yogurt to make a nice veggie dip.

This Cheese Spread is awesome. I tried making sandwich out of it and serve to my friends with smoothie. I can’t explain how they love it. Thanks for sharing your cheese spread recipe.
