My Saturday morning routine has been missing a good yoga class, so I went to a new yoga class Saturday morning. I’ve been wanting to go to this class for weeks, but just haven’t been in town … we’ve been so busy going places this summer! I am trying to really enjoy summer while it’s here this year, so there is very little weekend routine as each weekend seems to bring a new adventure. My poor yard has suffered and so has my garden, but my spirit is light and happy and I find the smiles creeping onto my face more and more often. This is a good thing.


So finally this week I was in town for a Saturday and I woke up eager to try this new yoga class. I knew I should eat something to give me energy, but not TOO much. I knew this was going to be a challenging yoga class (and it was), so I figured a smoothie would be just the right thing to give me energy for yoga.

I have been wanting to try making a smoothie with my dad’s apricots and the dreamy creamy Noosa yoghurt I love so much. Usually I like to freeze my fruit before blending it, but the apricots were in the fridge, so I tossed in a frozen banana to chill it up nicely. I chose the honey Noosa to let the apricot flavor shine through. I tasted my smoothie after blending, thinking I might want to add some cinnamon or vanilla or maybe some maple syrup, but it was perfect with just these three ingredients. So I slurped it down just like that. And then I used my finger to get every drop from the glass. It was so good I didn’t want to waste even a drop!

And then I went off to yoga and she totally kicked my butt! It was very different from any other yoga class I’ve ever been to (and I go to “power” yoga classes at least twice a week): this one was challenging, intense, cleansing and wonderful. I was totally wiped, happy and STARVING afterwards … and when I woke up today, my abs were sore. Now THAT’S a good yoga class!

Honey Banana Apricot Yoghurt Smoothie

  • Prep Time: 5 minutes
  • Total Time: 5 minutes
  • Yield: 1 - 2 servings 1x

Ingredients

Scale
  • 1 frozen banana, in chunks
  • 59 apricots, pitted (use 9 if your apricots are small, 5 if they are large)
  • 1 8-oz. container of Noosa honey yoghurt

Instructions

  1. Put all ingredients in a blender and blend until smooth.
  2. Pour into glasses and enjoy!
