Honey Sriracha Sesame Cashews ~ Sumptuous Spoonfuls #spiced #nut #recipe

It’s New Year’s Day. Wow. Another year has flown by us … another year of new beginnings ahead of us. Changes are afoot in my life. Not large, sweeping changes, just small ones, in the grand scheme of things, but as I get older, changes like a reorganization at work and a relocation of my yoga studio jar my sense of well being. They re-structure the flow of my life that I was quite comfortable with just the way it was, thank you very much.

I tell myself more and more that life IS change … you can’t keep going to the same classes at the same yoga studio with the same teachers forever. You can’t work with the same people at the same place, either. People move, get married, change jobs, have babies, try new ventures, discard old ones, and sometimes they get sick, and yes, they eventually die. The main thing (I am reminding myself) is to embrace and enjoy the journey. So the routine, the friendships, the stories, the challenges at work, the peace and calm of a yoga class, the feeling of vitality I get after a good workout, the joy of a good bite of food, a comforting bowl of soup or cup of tea, a glass of nice wine or a good, dark beer, these are the little things I treasure.

I wonder how long I will be able to enjoy these things … what will happen to me when I get old? Will I be surrounded by friends, enjoying good food and laughing? … or will I be alone, and sick, and sad? Will I be able to cook? Will I be able to do yoga? Will I have someone with me when I die? I hope it will continue to be a beautiful journey, as it has been. Each sad moment has brought me to another moment of joy. If I embrace the sadness, let myself feel it and learn from it, then I can move on to feeling glad to be alive again.

I’m hopeful for another year of friendships, another year of health, another year of growing and learning and doing. I’m wondering where my children will be at the end of this year–how they will grow and change and what paths they will find themselves on. I hope they will learn from the struggles and enjoy the next step of the journey.

Happy New Year, my foodie friends. May you find love, peace, joy, good food and friendships on your journey.

Honey Sriracha Sesame Cashews ~ Sumptuous Spoonfuls #spiced #nut #recipe

Honey Sriracha Sesame Cashews

  • Prep Time: 15 minutes
  • Cook Time: 45 minutes
  • Total Time: 1 hour
  • Yield: 3 cups of cashews 1x

Ingredients

Scale
  • 1 egg white
  • 2 Tablespoons honey
  • 1 Tablespoon Sriracha hot sauce
  • 1/2 teaspoon sea salt
  • 3 cups cashews (I used roasted, salted cashews)
  • 1/2 cup sesame seeds

Instructions

  1. Preheat the oven to 270 F. Spray a baking sheet with cooking spray.
  2. Put the egg white in a small mixing bowl. Using an electric mixer, beat until the whites are frothy but not stiff. Blend in the honey, Sriracha and sea salt. Add the cashews and stir to coat all the nuts.
  3. Pour the cashews onto the baking sheet and sprinkle liberally with sesame seeds.
  4. Bake at 270 F. for 30 – 45 minutes, stirring every 15 minutes, until the cashews are golden brown.
  5. Remove from oven and let cool, then transfer to an airtight container–or a tin or gift bag, if you are sharing these with a friend.

Notes

These nuts are not spicy, despite the Sriracha, and they are not very sweet either, despite the honey. They are just very tasty, with a nice crunch and a hint of sweet and spice.
