A chocolate cookie crust topped with chocolate, peanut butter and butterscotch chips, caramel, peanuts, cashews and then stuck together with a lovely sticky mixture of sweetened condensed milk, Bailey’s Irish cream and vanilla. To make them extra pretty, I drizzled them with chocolate after cutting.


My son made these ooey gooey bars … at first I thought they were a little TOO ooey gooey because he went a little crazy with the caramel and chocolate syrups, but everyone really really loved them. So, even though he didn’t measure ANYTHING while he was in the process of making them, I’m going to blog them anyway because it’s such an add-whatever-you-want kind of recipe. You may have seen similar bars in various forms on my blog, by various names … we’ve called them mashup bars and magic bars and even orgasm bars (because they really are THAT good). They are very forgiving and totally customizable.

My son made these bars made these almost two months ago and they are all long gone. I didn’t want to post a whole stream of desserts at the time, so I saved these photos for later … We took these bars to our event in April and they went like hotcakes, but we saved some for ourselves, because yeah, starting your day with one of these babies is like a dream come true. Just looking at these pictures is making me want to make them again … but I have other things to do. My daughter’s graduation is next weekend and we’re having a party! This is my baby girl, so I won’t have children in public school anymore. I can’t even begin to tell you how freeing this is for all of us. Yes, there is still college and the transition to adult-hood, but just having them both DONE with high school is a huge relief for me. We got new patio furniture (with a fire table!) for the occasion. My son and I worked hard to clean out all the STUFF we had collected down in the basement, too, and I also bought a new rug for the basement. It’s finally a pleasant living space now. In fact, my daughter’s friends are down there right now, hanging out on the very nice couch that sat neglected and un-used for years.

So I’m off to prep for the party … we’re planning on pulled pork sandwiches and a beautiful marinated cheese and fruit tray. And of course a gargantuan cake. (No, I’m not making the cake … we’re ordering the cake from Costco.) I’m thinking that will be enough. There is always too much graduation food … and nobody seems to want to eat at every grad open house they attend. As one of my friends said, “one can only eat so many funeral sandwiches.” It made me laugh, but think about it, what do they always serve at graduations and funerals? The same thing … sandwich meat on buns.  (At least that is what everyone here in middle America seems to serve … perhaps it’s time to rethink graduation food.)

Kyr’s Ooey Gooey Peanut Butter Mashup Bars

  • Prep Time: 20 minutes
  • Cook Time: 25 minutes
  • Total Time: 45 minutes

Ingredients

Scale

For the crust:

  • 3 cups crushed chocolate graham cracker crumbs
  • 1/2 cup butter, melted
  • 3 oz. dark chocolate, melted

For the bars:

  • 6 oz. (1/2 a bag) of semi-sweet chocolate chips
  • 6 oz. (1/2 a bag) of peanut butter chips
  • 6 oz. (1/2 a bag) of butterscotch chips
  • 2 cups roasted, salted peanuts (lots!)
  • 1 cup roasted salted cashews, roughly chopped
  • 1/4 cup chocolate sauce
  • 1/4 cup caramel sauce
  • 1/2 cup peanut butter, melted
  • 1 can sweetened condensed milk
  • 2 Tablespoons Bailey’s Irish Cream
  • 1 Tablespoon vanilla extract
  • Chopped toffee bits, for the top
  • Extra chocolate, melted, for drizzling (optional)

Instructions

  1. Preheat the oven to 350 F. Spray a 13x9x2 inch pan with cooking spray.
  2. In a small mixing bowl, mix the crumbs, melted butter and melted chocolate until well mixed. Press into the bottom of the prepared pan.
  3. Sprinkle the crust with the chips and nuts, then drizzle liberally with caramel sauce and chocolate sauce, then warm the peanut butter to melt it and drizzle that over top as well. In a small bowl, mix the condensed milk with the Bailey’s and vanilla and drizzle that over top as well.
  4. Sprinkle the top with some chopped toffee bits. Bake at 350 for about 25 minutes or until the bars are set.
  5. Let cool completely before cutting into small squares. After cutting, drizzle each square with melted chocolate.
