Loaded Peanut Butter Oatmeal Cookies {Gluten Free} ~ Sumptuous Spoonfuls #Healthy #Cookie #Recipe

I was trying to find some other cookies to make for my gluten free friends, so I thought it would be fun to try making a gluten free version of those wonderful healthy Peanut Butter Oatmeal Chocolate Chip Cookies. Kelly was up for it, but Mitch was having none of that. (He only likes chocolate chip and sugar cookies.) So Kelly and I shared this batch of cookies. I took them along with me on my trip for travel munchies.


The gluten free version is a little flatter and not quite as chewy as the regular cookie, so Kelly suggested adding raisins. I wanted to stick with the chocolate theme, though, so I used chocolate covered raisins, which added just the right amount of chewiness to these yummy cookies.

Gluten Free Peanut Butter Oatmeal Chocolate Chip Cookies

  • Prep Time: 15 minutes
  • Cook Time: 30 minutes
  • Total Time: 45 minutes
  • Yield: 2 dozen or so cookies 1x

Ingredients

Scale
  • 1 small, very ripe banana, mashed
  • 2 Tablespoons butter, softened
  • 1 large egg
  • 1/2 cup peanut butter
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 1 cup gluten free all purpose flour (I used Bob’s Red Mill)
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cups old fashioned gluten free oats
  • Mix-ins: dark chocolate chips, chocolate covered raisins, chopped peanuts

Instructions

  1. Preheat the oven to 350 degrees F. In a large mixing bowl, mix together the banana and butter, then stir in the egg, peanut butter, sugars and vanilla until well mixed.
  2. Add in the flour, baking powder, baking soda and salt and mix well, then add in the oats and stir some more until they’re incorporated too.
  3. Then fold in the chocolate chips and other mix-ins as desired and drop by spoonfuls onto a baking sheet sprayed with cooking spray. Bake for about 10 minutes or until they’re a nice golden brown color on top.

I love oatmeal cookies and just finished making some gluten free ones with chocolate chips but I like the additions of banana and peanut butter. Thanks for posting in Munching Mondays.
