This Mango Sunrise Margarita is a light, sparkly cocktail with fruity mango and a little tingle from club soda, lime, and the tiny hint of chipotle both on the rim and in the drink. The splash of grenadine adds a bit of sweet and a festive sunrise effect in the bottom of the glass.


It’s Cinco de Mayo tomorrow! I’ve long been a huge fan of margaritas, ever since my college days when I worked at ChiChi’s Mexican Restaurant. We made margaritas in a gargantuan plastic tub (okay it really resembled a garbage can, but it wasn’t a garbage can, it was only for margarita mixing). I only got to mix the margaritas a few times, but there were many bottles of tequila involved and there was definitely no hand-squeezing of limes going on. Just the scent of the margaritas while I was making that huge batch was intoxicating all on its own.

The scent of margaritas (or, frankly, just the smell of tequila) always sends me back to those young, happy, carefree days. My life now is a different kind of happy, a much calmer, quieter happy, with much less alcohol. Don’t get me wrong, there’s still room for sipping a nice margarita, but I stop drinking a loooong time before I used to back then in my party days.

So I wanted to make one or two or maybe three new margarita recipes for Cinco de Mayo this year, mostly because I’m doing two margarita events next week–one for celebrating a big event, one for our monthly cooking class. I came home from work tonight and it’s just beautiful outside. I started grabbing things from the fridge for my margaritas and headed out to the patio to photograph and sip and didn’t even notice the two deer lazing about on the lawn until I started shooting pics. Can you find them in the background there?

The deer were so relaxed and happy, they didn’t even bother to get up when I went out there with my camera. Their little ears perked up and they looked my way, but didn’t make any moves to take off until after my photo shoot was long done and I’d drunk a margarita and stored the rest in the fridge for another night. I think they’ve got the right idea … let’s all take some time to “chill” and relax this spring. The world would be so much better off if we all just took a few moments to breathe and relax and enjoy the day, with or without the margarita. (Better with one, though, IMHO!)

Mango Sunrise Margaritas

  • Prep Time: 15 minutes
  • Total Time: 15 minutes
  • Yield: 3 - 4 servings 1x

Ingredients

For the sweet & salty smoky rim:

  • 1 Tablespoon coarse sea salt
  • 1 Tablespoon sugar
  • 1/41/2 teaspoon smoked paprika
  • 1/41/2 teaspoon chipotle powder

For 3 – 4 margaritas:

  • A chunk of fresh lime
  • Ice
  • 1/2 cup tequila
  • 1/4 cup triple sec
  • 1/4 cup freshly squeezed lime juice
  • 1 cup mango passion fruit juice or mango nectar
  • 1/2 teaspoon of the sweet & salty smoky rim mixture
  • About 4 oz. or so of club soda
  • Grenadine
  • For garnish: Slices of lime

Instructions

  1. In a small bowl, mix together the mix for the rim. Reserve 1/2 teaspoon of the mixture for the margaritas, then pour the rest onto a plate large enough to accommodate the size of your glasses. Rub the chunk of lime around the edge of the glass, then dip the glass in the rim mixture, rotating to make sure you cover all the edges. Add ice to fill the glasses.
  2. In a shaker or pitcher, add the rest of the ingredients except the grenadine. Shake or stir to mix, then pour over the ice in the glasses.
  3. Drizzle each margarita with a bit of grenadine and garnish with slices of lime. Serve with stir sticks or small straws so the guests can get the grenadine mixed in.
