For the past couple months, I took a break from salads. I don’t know why … perhaps it’s the weather. I normally love salads and eat them all the time, even right through winter. But this year I kept buying salad greens, but never used them. Then last week, I finally got around to making that Roasted Pear & Bacon salad and that did it! I’ve been re-converted. Now I’m back to being a salad addict and I totally want salads all the time. Well, not quite ALL the time, but at least a couple times a week!


To make a good salad there are several essentials, but regardless of what else is in there, the top two things I need most in my salads are:

  • Good greens
  • A great homemade salad dressing

Nuts and fruits and cheese and sometimes chicken or shrimp or salmon are great too, but the dressing is critical. This recipe is a great homemade salad dressing and (like most salad dressings), it is uber simple to make. Maple with Dijon is a little like honey mustard, but on a whole different plane of flavor, way above honey mustard level.

If you have a bowl and a whisk, that’s all the equipment you need to make this dressing. You can use this vinaigrette on so many different salads, but it also would work well as a marinade for pork or chicken or even as a dipping sauce for appetizers.

Maple Dijon White Wine Vinaigrette

  • Prep Time: 5 minutes
  • Total Time: 5 minutes
  • Yield: 3/4 - 1 cup of dressing ... enough for 2 - 4 personal salads. 1x

Ingredients

Scale
  • 2 Tablespoons white wine or champagne vinegar
  • 2 Tablespoons white wine
  • 1/2 Tablespoon dijon mustard
  • 12 Tablespoons real maple syrup
  • 1/41/2 teaspoon Italian seasoning
  • 1/4 teaspoon granulated garlic
  • 1 teaspoon of bacon fat
  • 12 Tablespoons extra virgin olive oil

Instructions

  1. In a small bowl, whisk together all ingredients except the olive oil.
  2. While whisking, drizzle in the olive oil in a very thin stream. Take a little taste by dipping your finger and add maple syrup if you want it sweeter, and adjust seasonings.
  3. Store in a covered bottle in the fridge.

Notes

If you are roasting pears, add the juices from the pan to this dressing. Pear juice in this dressing makes it even more heavenly.
