Maple Spice Greek Yogurt Fruit Parfait ~ Sumptuous Spoonfuls #parfait #recipe

This was a Saturday morning pre-yoga breakfast. Typically on Saturday mornings, I wake up, start my facebook party, make myself a cup of chai and then I spend altogether too much time looking at yummy foods. In a last-minute panic, I usually throw some frozen fruit & yogurt into the blender, pour it into a glass and run out the door, smoothie in hand, because I know you NEVER want to show up for Roscha’s class with no breakfast in your belly. Nothing too heavy–you need to be able to move comfortably because she always works us hard, but you’ve got to have some calories in you if you want to make it through the class.


This morning, though, I woke up early and thought about all the beautiful fruits and berries in my fridge and decided I needed to treat myself to a beautiful parfait.

Fresh Fruit & Maple Spice Greek Yogurt Parfait


Ingredients

Scale

For the bottom layer:

  • 1/31/2 cup fresh honeydew chunks
  • A few fresh basil leaves, chopped

For the Maple Spice Greek yogurt:

  • 1/2 cup plain nonfat Greek yogurt
  • 3 teaspoons real maple syrup
  • 1/81/4 teaspoon EACH: nutmeg, cinnamon, and ginger

For the middle layer:

  • 1 ripe apricot, pitted and chopped
  • 2 ripe strawberries, tops removed and chopped

For the top:

  • Several fresh blueberries
  • 1 fresh strawberry
  • A sprig of fresh basil, for garnish
  • Toasted nuts or sweet spiced nuts (optional)

Instructions

  1. In a small bowl, mix the honeydew and basil leaves and carefully place them in the bottom of your parfait glass.
  2. Now, in the same bowl, mix the yogurt, maple syrup and spices and pour about half the mixture over the honeydew.
  3. Chop the strawberries and apricot and add them over the yogurt, then pour the rest of the yogurt on top of that. Top with blueberries, a strawberry and a sprig of fresh basil or mint.
  4. For a little crunch, add chopped toasted nuts (or sweet spiced nuts).
