Do you ever go to the grocery store and you are going about the store gathering the things that you need … and then someone passes you and something in their cart catches your eye and you think … hmm, that’s a good idea! Maybe I should try that.

That is totally what happened to me with these ribs. I don’t know what came over me. I think I was over in the back of the store picking out something or other that was on my list when this older gentleman passed me … he didn’t have much in his cart, but right on top was a big old rack of ribs.

Now, I have never in my life attempted to make ribs, but I was suddenly struck with the urge to check out the pork section, so I did … and much to my surprise, the ribs were wildly on sale. I found an entire rack of ribs for about $6 … which I totally never expected to see. How could I pass THAT up?

I plopped the big old rack of ribs in my cart and sailed about the business of finishing my shopping. When I got home, that was when it struck me. How the heck do I cook these? Should I do them on the grill? I started perusing recipes online and this one looked perfectly foolproof. That’s what I needed … I went with it, even though I was a little hesitant about slathering my ribs with brown sugar, but then, hey, I reminded myself we’re talking RIBS here … this is NOT health food! So I just went with it.

And when I first opened that packet out of the oven, it … was … heavenly! Perfect, fall-apart tender, meaty juiciness. I could have eaten them right there and then with nothing else, but I knew my kids would want the BBQ sauce, so I did add that last little step. They both loved them! My daughter polished her ribs off all the way down to the bone. My son is way pickier about fat with his meat, but he did a good job of eating his too. Together they finished off half the rack. I did a little dance of mom-joy, secretly, inside my heart, where my  kids couldn’t see it.

Now I can check off “tender, juicy BBQ ribs” as one of the meals I have successfully mastered.

Melt in your Mouth Oven-Roasted BBQ Ribs

  • Prep Time: 15 minutes
  • Cook Time: 2 hours
  • Total Time: 2 hours 45 minutes
  • Yield: 1 rack of ribs (2 - 4 servings) 1x

Ingredients

Scale

For the rub:

  • 1/2 cup brown sugar
  • 1 Tablespoon smoked paprika
  • 1 Tablespoon granulated garlic
  • A pinch of chipotle powder
  • 1 teaspoon smoked salt (or regular salt)

For the ribs:

  • 1 rack of pork ribs
  • Barbecue sauce of your choice

Instructions

  1. Preheat the oven to 300 F. In a small bowl, mix the rub ingredients together. Rub both sides of the ribs with the mixture, covering them completely. You may have a little extra rub–just save that for next time.
  2. Prepare a foil packet by laying down two strips of foil in a longer length than the ribs. Set the rack of ribs on the foil and make a “pan” of sorts by folding up the edges. Make another two layers of foil and put that over top, folding the edges together to seal tightly. Set the foil packet on a baking sheet and put in the preheated oven. Bake at 300 F. for 2 – 2 1/2 hours.
  3. Remove the ribs from the oven and let sit for 15 – 30 minutes before opening the packet.
  4. Open the packet, spread barbecue sauce on both sides of the rack of ribs. Set the oven on broil.
  5. Broil the ribs very briefly for just a couple minutes to caramelize the sauce onto the ribs.
  6. Enjoy!
