Holiday spices and maple syrup in a zesty orange cranberry sauce that cooks in just 5 minutes in the microwave. It’s so easy to make, and soooo much better than those canned sauces.


It’s almost time for my monthly cooking class at work and this month I’m focusing on stress-free Thanksgiving recipes. I have no cooktop at work, just a microwave and a cookie oven, so I have to be a little creative sometimes in coming up with things for us to make. I’ve also noticed that everyone at work seems starved for time, and I know prepping for the holiday feast can be a big task, so I’m all for making a things a little easier so you have more time to relax and enjoy the holiday with your family. In case you have cranberry scrooges at your house, don’t worry about wasting your precious cranberry sauce–it can be re-purposed to make festive things like cheesecake and sweet potato beer bread.

Microwave Maple Orange Spice Cranberry Sauce

  • Prep Time: 5 minutes
  • Cook Time: 5 minutes
  • Total Time: 10 minutes
  • Yield: About 1 cup of cranberry sauce 1x

Ingredients

Scale
  • Zest & juice of 1 orange
  • 2 cups fresh or frozen cranberries
  • 1/3 cup real maple syrup
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon allspice
  • 1/8 teaspoon cloves
  • 1/2 teaspoon vanilla

Instructions

  1. Use a fine shredder to get the zest off the orange, then cut the orange in half and squeeze all the juice you can out of it into a medium mixing bowl.
  2. Add the cranberries, maple syrup, cinnamon, allspice, cloves and vanilla to the bowl and stir. Microwave on high for 3 minutes, remove and stir, then microwave another 2 minutes and stir. If needed, microwave for 1 – 2 minutes longer, stopping when the cranberries have all popped and the mixture starts to look like cranberry sauce.
  3. Stir in the orange zest. Refrigerate in a covered container until serving time. If desired, add a little more orange zest for garnish at serving time.
