I am doing a Mexican cooking class today at work. Cooking is not my job, but I do these for fun for my coworkers, once a month (or so), at lunchtime. The company reimburses me for the cost of the food. It’s a lot of work and I don’t get paid for it, but I enjoy cooking with my friends. I’ve been getting ready prepping things all weekend.


I have a lot of good food planned and was contemplating making them a dessert too. And since it is mulberry season and my fridge is plump full of ripe, juicy berries, I did a search on the internet for Mexican berry desserts and this is what I found. Dessert nachos! Hmmm … that’s a good idea. So I made up a plate of them and tested them on my daughter who ate this entire plateful (minus one or two that I ate) for breakfast. So yes, they are delicious and they are easy and they are beautiful and pretty low-cal for a dessert.

The bad news is I’m not making these for the cooking class today. I decided we just don’t have time. I am trying to pack a LOT of recipes into 30 minutes. If I pull this off, it will be a miracle. I do plan to have some food ready at the beginning of the class so everyone gets something to eat if they have to leave before everything is done. Too bad they won’t get to taste these lovelies.

Mixed Berry Dessert Nachos

  • Prep Time: 15 minutes
  • Cook Time: 10 minutes
  • Total Time: 25 minutes
  • Yield: as many as you like!

Ingredients

Scale
  • Several small flour tortillas
  • About 1 Tablespoon butter, melted
  • Cinnamon sugar
  • 12 cups mixed berries (I used mulberries and strawberries)
  • 12 Tablespoons sugar
  • Chocolate syrup
  • Light whipped cream

Instructions

  1. Preheat the oven to 400 F. Brush both sides of the tortillas with butter, then cut them into wedges and sprinkle both sides with cinnamon sugar.
  2. Set them on a cookie sheet and bake for 5 minutes or until lightly browned, then flip and cook another 5 minutes on the other side until light brown and crisp.
  3. While the tortillas are crisping, in a small mixing bowl, mix the berries with a bit of sugar.
  4. To assemble the nachos, line your plate with the crisped tortillas, then sprinkle with berries. Top with another layer of tortillas and berries. Drizzle lightly with chocolate syrup then a bit of whipped cream on top and enjoy!
