I DO usually try to stay fairly healthy in the kitchen, but this recipe is an exception. I’ve seen quite a few 7-Layer bar recipes popping up around the internet foodie circles lately and it made me think of that huge bag of Oreo cookie crumbs I have here … hmmm, wouldn’t Oreos make a nice bottom layer for a 7-layer bar? And then once I started on that track, I thought about what flavors would go well with it, and that led me to toffee (because I LOVE toffee) … and so that is how this pan of rich, decadent Ooey Gooey Oreo Toffee 7-Layer Bar came to inhabit my house.


The nice thing about them, though is that they are SO rich, you can cut them into small squares and just a little square about two bites big is enough to satisfy. And I’m VERY pleased that it made a significant dent in my humongous bag of Oreo cookie crumbs. Anyway, since this does make a big 13x9x2 inch pan of bars, I cut them up into little squares and took them to work. They went over really well. Even some of those who are watching their weight tried a little one and agreed it was worth it. See, that’s what I want in a treat … something that is rich enough to be worth it. If I’m going to indulge, I want it to taste truly indulgent and wonderful. Otherwise, to me it feels like an opportunity is wasted. Every calorie that enters my mouth should taste amazing. These Ooey Gooey Oreo Toffee Bars definitely fit that description.

Ooey Gooey Oreo Toffee 7-Layer Bars

  • Prep Time: 15 minutes
  • Cook Time: 25 minutes
  • Total Time: 40 minutes
  • Yield: 36 bars or so 1x

Ingredients

Scale
  • 1/4 cup butter
  • 3 cups crushed Oreo cookie crumbs
  • 1 8-oz. package Heath English Toffee Bits
  • 1 cup high-quality chocolate chips (I used Ghirardelli semi-sweet)
  • 1 cup oatmeal
  • 1 can fat free sweetened condensed milk
  • 1 cup crushed Oreo cookie crumbs
  • 1/2 cup sliced almonds
  • Salted caramel sauce (recipe in this post) and chocolate syrup

Instructions

  1. Preheat the oven to 350 F. Set the butter in a 13 x 9 x 2 inch pan and set it in the oven to melt. Once the butter is melted, mix it around with the Oreo cookie crumbs and then pat the crumbs in an even layer across the bottom of the pan.
  2. Sprinkle about half of the toffee bits over the Oreo crumbs, then the chocolate chips, then the oats.
  3. Drizzle the sweetened condensed milk over top of the oats and top with the rest of the toffee bits and then the last cup of Oreo crumbs. Sprinkle with the sliced almonds, drizzle the top with some salted caramel and chocolate sauce.
  4. Bake at 350 F for 25 minutes. Take the pan out of the oven and let cool completely before cutting into bars. These are really rich, so cut them into little squares!

I made these for my family, and they were a HUGE success! I didn’t have sweetened condensed milk, so I made my own with half and half, sugar, and vanilla. Then I used crushed walnuts instead of sliced almonds because of allergies. They were AWESOME. Thanks for the recipe!
