Peanut Butter Coco Popcorn #choctoberfest

Peanut butter and chocolate drizzled popcorn with nuts, candies, pretzels and sprinkles! The perfect thing to snack on while watching the movie Coco (or your favorite Halloween or Dia de los Muertos movie), this popcorn will make your movie experience so much better.

I am naming this popcorn mix after my favorite movie that I discovered this year. “Coco” is an adorable, colorful animated movie that I fell in love with on the flight to Florida when we went there in April. It was a vacation my (grown) kids wanted to take, remembering our last trip to Florida that I think was about 6 years ago. I don’t do headphones (they bother my ears), so I had none, but the bright colors and beautiful animation pulled me in and I wanted to watch it. My daughter asked me what the heck I was doing watching a movie without headphones on a flight, but I watched the entire movie without sound on the flight and was totally enthralled. And during our vacation, I had the opportunity to watch it again, with sound, and loved it even more!

“Coco” is not just a fun animated movie, it is a beautiful adventure honoring the Hispanic culture. It’s such an adorable .. and touching movie! (This is just my opinion … I wasn’t paid to say that.)

Anyway, this is a #choctoberfest post, guys, so let’s talk sprinkles for a moment. My daughter has been a HUGE fan of sprinkles since, um, probably since she came into this world. I remember one birthday party we made a castle cake and she and her friends completely filled in the courtyard with sprinkles! It was INSANE how many sprinkles were on that cake. And then, in her middle school years, she developed a fondness for skulls. When I told her about #choctoberfest and Sprinkle Pop (one of our sponsors) and mentioned to her that they had sugar skulls, she was SO excited! She was like “yes, yes, gimme!” … so I knew I had to get something with the sugar skulls. I wanted to get a package of the sugar skulls … alas they were all out of sugar skulls. But all was not lost! … they still had their “Dia de los Muertos” mix, which included sugar skulls, so I ordered that. When the sprinkles arrives, I didn’t see any skulls and I was so sad. But upon further inspection, there were some hiding in there! And they were adorable. See?

The “Dia de los Muertos” sprinkle mix is filled with the colors of the season:

Sprinkle Pop sprinkles

And if Dia de los Muertos isn’t your thing, Sprinkle Pop has a really creative assortment of sprinkles (unicorns, anyone? or glittery stars? or hearts?). Also, they create custom sprinkle mixes in house. If you can dream it, they can make it! How cool is that?

You can find Sprinkle Pop on pinterest, instagram and facebook too.

Thanks to Sprinkle Pop sprinkles, my “Coco” popcorn mix turned out so festive! I was super excited when I finished it and saw all the pretty colors and the adorable sugar skulls. I went and bought a skull mold and made some white chocolate toffee skulls just for this occasion, to add a few more skulls to the mix, just for fun. Oh, and I bought the skull bucket too, just for this post.  You know, just cuz I love you so much, my foodie friends.

Hey, if you haven’t signed up to win the #choctoberfest 2018 prize package worth over $400 (including some Sprinkle pop sprinkles), you seriously need to! Go here to enter.

I am so grateful for you, my sweet foodie friends. I hope you enjoy this popcorn. (And I hope one of you wins the prize pack too!)

Peanut Butter COCO Popcorn #choctoberfest

  • Prep Time: 15 minutes
  • Cook Time: 15 minutes
  • Total Time: 30 minutes
  • Yield: 4 - 6 servings 1x

Ingredients

Scale
  • A big bowl of air popped popcorn (10 – 12 cups), with un-popped kernels removed
  • 2 cups of Reese’s Peanut Butter Puffs
  • 1 cup salted, dry roasted peanuts
  • 1/2 cup pumpkin seeds and cashews (either or … or a mix of both)
  • 12 individual bags of caramel or peanut butter M&M’s (or whichever M&M’s makes you happy)
  • 1 cup pretzel sticks (optional)
  • 1 small tube of mini M&M’s
  • 6 squares (12 oz.) of white almond bark (or white chocolate)
  • 48 Tablespoons high quality cocoa powder (use more or less to taste)
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon cayenne
  • 1 cup peanut butter
  • Sprinkle Pops Dia de los Muertos mix
  • Chocolate skulls (optional)
  • Coarse sea salt

Instructions

  1. Pop up your popcorn, then toss it with the peanut butter puffs, nuts, pretzel sticks and full-size M&Ms, and spread the whole lovely mess out in a thin layer on a large tray or baking pan (or two or three).
  2. Chop up the almond bark into small chunks. In a small microwaveable bowl, melt the almond bark in the microwave. Microwave for 90 seconds, stir, then microwave for 30 seconds more, stir, keep doing this till the bark is all good and melted.
  3. Add the spices, peanut butter and cocoa to the almond bark and stir until it’s all nice and smooth.
  4. Drizzle about half the chocolaty peanut butter goodness all over your popcorn and stuff. Stir up the popcorn mixture a bit just to make sure you aren’t leaving any little kernels or nuts out of the fun, then drizzle the rest of that lovely chocolate stuff over your popcorn.
  5. Sprinkle the whole mess with some coarse sea salt, mini M&Ms and the sprinkle pop sprinkles. Gaze at the beauty of it all.
  6. Here’s the hard part: let the popcorn sit for 15 – 30 minutes until the chocolate sets.
  7. Break the popcorn up into pieces and enjoy! Store any leftover popcorn in an airtight container or tin.

Notes

If there are nut allergies, leave out the nuts. To make this mix gluten free, leave out the pretzels.
