My kids and I went to my parents’ house last weekend to join the rest of the crowd for Easter … the first thing my nephew said to me was “can we bake some cookies?” It was just about dinnertime when we got there though, and I had a hunch he had something up his sleeve, so I asked a few questions to find out what was behind this request. It turns out he had already asked some others in the family to bake cookies with him and they had all told him no, it was too close to dinnertime. I knew I would get in trouble with my sister if I said yes, but I didn’t want to say no either, so we came up with a compromise. We decided we’d mix up the cookie batter before dinner, and then right after dinner we would pop them in the oven and have cookies for dessert!

Then we had to figure out what kind of cookie? I was surprised he didn’t have any particular kind in mind … but some other family members had some suggestions: “banana oatmeal cookies” was suggested … which I of course had to amend to include peanut butter and chocolate. My nephew thought that sounded like a great combination, so I set out to find a recipe that would serve up our intended cravings. Surprisingly, I found a pretty healthy one. I was shocked to find a recipe with only 2 Tablespoons of butter from Baking Bites, so my nephew and I set out to mix up the batter. He was a great helper and we were done in no time.

After a wonderful dinner, we baked up the cookies and they were going so fast, I had to hide some away for morning when I could take some photos. This pleased my nephew as well because he knew I had hid them and as it just so happened, my little cooking buddy got to eat a good share of his own handiwork. (Personally I was glad, too, because sometimes cookies have a way of “disappearing” in the night hours when the kids and I are asleep … and I really really really love these cookies! Because, yeah, I’m kind of partial to just about anything that involves peanut butter, chocolate, and bananas. And oats!)

Peanut Butter Oatmeal Chocolate Chip Cookies

  • Prep Time: 15 minutes
  • Cook Time: 25 minutes
  • Total Time: 40 minutes
  • Yield: 2 - 3 dozen cookies, depending on how big you make them 1x

Ingredients

Scale
  • 1 small, very ripe banana, mashed
  • 2 Tablespoons butter, softened
  • 1 large egg
  • 1/2 cup peanut butter
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 1/2 cup all purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cups old fashioned oats
  • About 1/2 cup of dark chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F. In a large mixing bowl, mix together the banana and butter, then stir in the egg, peanut butter, sugars and vanilla until well mixed.
  2. Add in the flours, baking powder, baking soda and salt and mix well, then add in the oats and stir some more until they’re incorporated too.
  3. Then fold in the chocolate chips and drop by spoonfuls onto a baking sheet sprayed with cooking spray. Flatten the little cookie-lings a bit with your hands, then bake for about 10 minutes or until they’re a nice golden brown color on top.

I love oatmeal cookies, peanut butter cookies, and chocolate chip cookies. Now you have combined them all along with bananas…they have to be great.

Hi Ann, this recipe looks just like the one I have been looking for. All the ingredients I love and I was just wondering why you use whole wheat flour as well. Thanks and will let you know how they turn out at the weekend coco

I use whole wheat flour because it’s healthier and I like the taste of it. You can always use white if you prefer 🙂

Could you leave out the banana? Not much of a fan. Would you need to substitute something else for the moisture factor?

Hmm … any fruit puree would most likely work in replacement, like applesauce.

Thanks for the recipe! I was bored and decided to bake a healthier chocolate chip cookie! I just made these cookies and they’re like a chocolate chip/banana bread/peanut butter/oatmeal cookie.. Everything I love! I can’t stop eating them!

Hi Ann! My roommate and I are going to be making these today! They look so delicious! (: Do you know if you can substitute honey for the sugar and greek yogurt for the butter?? Thanks for the recipe!

Gabby I have not tried using honey or Greek yogurt so I’m honestly not sure. I wouldn’t eliminate the butter altogether … it’s important to the texture of the cookie. I think you would have to adjust something (perhaps add more oats?) to counter the moisture from the honey and yogurt. Let me know how they turn out and what you did to modify it! I would love to try that sometime.
