Oooey gooey “s’more” bars with a chocolate Oreo cookie crust, peanut butter, chocolate chips, chopped salty peanuts and perfectly toasted marshmallows.

Usually I don’t like s’mores. I remember I used to like them sometime way back in the dim past, but not any more. They are altogether too sweet for my tastes. Now if you added peanut butter, some crunchy, salty peanuts, and good dark chocolate, then you might get my attention. That’s what these bars were the first time I made them to take to the office. I was again trying to find ways to use up my over-sized bag of Oreo crumbs that my friend gave me, so I thought I would make some bars to take to work.

I ran across this recipe from Top with Cinnamon that looked like they were quite quick to make and had that ooey gooey deliciousness factor that everyone loves at the office potlucks. I used some really good quality dark chocolate chips and oh they were good! They were a big hit at the office … and my kids thought they sounded amazing … except for the peanuts. They didn’t want peanuts. So I made them a new pan of Smoreo bars this morning without the peanuts. Personally, I liked the chopped peanut version much better … but that’s all right. They can have them without. I probably should have used her crust recipe because mine turned out rather crumbly and kind of fell apart on me … oh well … next time!

Peanut Butter S’more-o Bars


Ingredients

Scale
  • 1/4 cup butter
  • 1/4 cup dark chocolate chips
  • 2 cups crushed Oreo cookies
  • 1/2 cup peanut butter
  • mini marshmallows
  • 1/2 cup chocolate chips
  • 1/2 cup coarsely chopped salted peanuts (optional, but they add a really nice crunch and some salt to counter the sweetness)

Instructions

  1. Preheat the oven to 350 degrees. Melt the butter and chocolate chips in the microwave and stir to mix. In a bowl, mix the melted butter mixture with the Oreo crumbs.
  2. Using a spatula or your fingers, press the Oreo crumb mixture into a 9×9 inch square pan. Bake in the hot oven for 10 minutes.
  3. Place the peanut butter in a small bowl and warm it briefly in the microwave (about 30 seconds).
  4. When the Oreo crust is done, spread the warm peanut butter over the crust, then top with chocolate chips and coarsely chopped peanuts. Top the whole pan with a single layer of mini marshmallows.
  5. Put the oven on the broiler setting and set the pan in the top rack under the broiler, but watch it carefully! Keep the pan in the oven just long enough to toast the marshmallows to a nice brown color (30 sec – 2 minutes).
  6. Cut into small squares to serve.
