Sometimes on a snowy night in April, the drive home on the slippery streets frazzles your nerves. By the time you pull into the garage, you are so tense you say to your daughter “I need a beer.” She looks at the clock and says “It’s after 6:00, you’re entitled.”


You know you should go out and shovel the driveway or at least get on the treadmill like you usually do, but then, sometimes on a snowy night in April, you skip the shoveling and the treadmill and open a bottle of wine instead, to calm your nerves. A glass of dark red wine helps wish away the snow, but it’s still there and now, now you’re hungry. Daughter has already feasted on banana bread and string cheese (I know, what a supper, but sometimes on a snowy night in April, it’s okay).

Then, easy cheesy nachos and a beer sounds like just the thing, so sometimes on a snowy night in April, you pull out the pot roast from the freezer that you made ages ago (was it snowy then too? was there ever a time without snow?) because you want some meat on your nachos and you make up a beautiful plate of nachos which you thoroughly enjoy with a good dark beer. The snow should melt on its own. No, you shouldn’t have to shovel on a snowy night in April.

And then, because it’s also Earth Day on this snowy night in April, you light the candles, turn off the lights, and sit and talk with your daughter for 30 minutes before shuffling off to bed to hide under the covers and dream the snow away.

Sometimes on a snowy night in April, that is what happens. Sometimes a simple plate of nachos somehow makes things feel a little better.

Pepper Jack Potroast Nachos

  • Prep Time: 5 minutes
  • Cook Time: 1 minute
  • Total Time: 6 minutes
  • Yield: As many servings as you like

Ingredients

  • Tortilla chips
  • Leftover pot roast (recipe here)
  • Chopped onion
  • Chopped jalapeno
  • Pepper jack cheese, shredded

Instructions

  1. Lay the tortilla chips on a plate in an even layer.
  2. Warm the pot roast and pull off bits of tender pot roast to scatter about on the chips.
  3. Sprinkle with chopped onion and jalapeno.
  4. Top with pepper jack cheese.
  5. Microwave on high for about 1 minute or until the cheese is melted. Enjoy!
