Quick, what do you do when dinner is almost ready and you have just a few minutes to come up with a veggie? Something that will stand up to rest of your fabulous meal and act like it belongs there, something that compliments all the flavors in your table, and perhaps something that steals a little of the spotlight?


Add in a bold tasty cheese like Asiago and a little leftover marinade from a jar of artichoke hearts and you have yourself a scrumptious, perfectly crisp-tender, beautiful, delicious, healthy side in yes, just a few minutes, thanks to frozen broccoli florets and microwaves.

This is right on track with my eat-more-veggies initiative … while I expect this would normally feed 2-3 people as a side, I ate all of this myself, with a little of my dad’s fabulous lean corned venison on the side and a tiny pillow biscuit. My kids chowed down the rest of the venison and biscuits … let them have it. I’m totally entranced with this broccoli.

Quick Artichoke Asiago Broccoli

  • Prep Time: 5 minutes
  • Cook Time: 5 minutes
  • Total Time: 10 minutes
  • Yield: About 2 servings 1x

Ingredients

Scale
  • 1 small bowl-ful of frozen broccoli florets (about 0.6 oz.)
  • 3 teaspoons artichoke marinade
  • Red Robin Seasoning (or your favorite seasoned salt) & freshly ground pepper
  • A light sprinkle of granulated garlic
  • About 0.4 oz. freshly fine shredded Asiago cheese

Instructions

  1. Put the broccoli in a microwave safe bowl, sprinkle with Red Robin Seasoning and freshly ground pepper, then just a bit of the granulated garlic and microwave on high for 1 minute. Stir and repeat as many times as needed to thaw and warm the broccoli.
  2. Once the broccoli is thawed, add the artichoke marinade and toss to coat. sprinkle with about half of the cheese. Microwave for 30 – 90 seconds longer until the broccoli is hot and the cheese starts to melt.
  3. Move to a serving plate and sprinkle with the rest of the cheese. Enjoy!

Notes

If you have some of the artichokes from the jar left, then by all means, chop up some artichokes and toss them in along with the broccoli! I had nothing but that yummy artichoke-flavored marinade left, and didn’t want it to go to waste.

I love my veggies and my cheese, almost equally so this recipe speaks to me. Plus, bonus points for using the leftover liquid in the artichoke jars. What a fantastic use.

i love this cheesy broccoli dish. I’m w you, I could eat a huge bowl of this as a main dish. I’ve never heard of artichoke marinade. Intrigued.

When you buy the marinated artichoke hearts, it’s the liquid they come in. It’s super tasty!
