One more recipe for #Choctoberfest! Oh it’s been fun dreaming about all the wonderful things I could do with chocolate this week. This whole big event has been sponsored by Imperial Sugar. Thanks to them for sending me the abundance of sugar!


This recipe came about because I chanced upon an over-abundance of flour tortillas, thanks to a Qdoba order at work which always comes with too many tortillas for the fillings they supply. I saved the tortillas, thinking I could definitely make use of them. (After all, it takes FOREVER for them to go bad …) and I just happened to have some fresh raspberries still from my sister’s raspberry patch.

I thought it would be fun to try making a dessert quesadilla and this lovely treat turned out to be uber simple. My daughter suggested the addition of the cinnamon roasted almonds and they were, indeed, the perfect addition to this easy sweet treat. If you don’t have cinnamon roasted almonds on hand, here’s my recipe … or just use regular almonds. Or if you’re not into nuts, just leave them out.

Raspberry Chocolate Dessert Quesadilla #Choctoberfest

  • Prep Time: 5 minutes
  • Cook Time: 5 minutes
  • Total Time: 15 minutes
  • Yield: as many as you like!

Ingredients

Scale

For each quesadilla:

  • 2 flour tortillas
  • Cream cheese
  • Several fresh raspberries
  • Cinnamon roasted almonds, chopped
  • Chocolate chips
  • A bit of butter

For the top: Light whipped cream and a few more fresh raspberries


Instructions

  1. Spread a layer of cream cheese on one tortilla, then sprinkle with raspberries, chocolate chips, and almonds. Top with the 2nd tortilla.
  2. Warm a nonstick frying pan or omelet pan over medium heat, then brush with butter. Reduce the heat to medium low and slide the quesadilla into the pan. Cover and let cook until browned on the bottom. Carefully flip the quesadilla with a spatula and cook until the other side is browned and the chocolate is melted.
  3. Top with light whipped cream and fresh raspberries and serve hot.
