Shrimp & Smoked Salmon Sushi Bowl ~ Sumptuous Spoonfuls #easy #healthy #seafood #recipe

All the delicious flavors of sushi in an easy bowl! My friend Jon (who is Asian) calls this “bachelor sushi” … he tells me the way he makes sushi at home is just to throw it all in a bowl. Sometimes if he’s making sushi for a crowd, he just fills a cake pan with sushi ingredients. Sushi in a cake pan? It sounds kinda funny, but he tells me it’s a huge hit at parties and I totally believe him.


Spring is finally beginning to peek its head out from behind the clouds here and my thoughts are turning to fresh vegetables and salads. I also have sushi on my mind, as I prepare to do a third sushi class at work (back by popular demand). Yesterday morning I did double yoga classes, with the second class at a brewery so there was yes, beer afterwards. (Hey, it was ALMOST noon!) … I came home from that 2nd class not quite famished, but close.

I had some other things to do before I could eat though (I don’t recall what), so by the time I made this sushi bowl, I WAS famished. The shrimp and salmon in the bowl was just the protein boost I needed after all that core work, the cucumber, carrot and radish gave it excellent crunch, the avocado and the sauce a wonderful creaminess with a little bite and the rice rounded it out so perfectly. I even put a big bed of fresh spinach underneath, for extra iron and veggie power. I just realized as I look at the photos that in my hunger, I completely forgot the black sesame seeds that I meant to sprinkle on top. Ah well, it was still delicious and so satisfying.

If you love sushi, you will absolutely love the flavors of this sushi bowl. (Heck, even if you don’t like sushi, you will still probably love it! I never was a fan of sushi until I discovered that it’s the nori that I can’t stand. There ARE ways to make sushi without seaweed, believe it or not–and this is one of them.)

I left out the amounts in the recipe so you can adjust to your liking. It’s more a method than a recipe.

Shrimp & Smoked Salmon Sushi Bowls

  • Prep Time: 15 minutes
  • Total Time: 15 minutes
  • Yield: as many as you like!

Ingredients

  • Fresh spinach leaves
  • Cooked sushi rice (recipe here)
  • Large frozen pre-cooked shrimp, thawed
  • Smoked salmon
  • English cucumber, spiralized or sliced thin
  • Fresh carrot, spiralized or sliced thin
  • Fresh radish, chopped
  • Fresh, ripe avocado, sliced
  • Japanese Yum Yum Sauce (recipe here)
  • Black sesame seeds, wasabi, and/or crumbled nori (optional)

Instructions

  1. Make a bed of spinach at the bottom of your bowl.
  2. Arrange the rice, shrimp, salmon, cucumber, carrot, radish and avocado in the bowl.
  3. Top with yum yum sauce and other optional toppings as desired and dig in!

Totally! … frankly I liked it more because it gave me the freedom to adjust the ratios of ingredients to my liking without worrying about whether or not it would roll up nicely. And it’s still beautiful. Thanks Michele.

I’ve had wine and yoga but never yoga in a brewery. That’s my kind of yoga! This bowl looks so delicious and healthy. I can see where just piling all of the ingredients in the middle of the table would be a great idea!

To be honest, I’m not either … but this was SO good! I discovered that what I didn’t like about sushi was the nori (the seaweed wrap), so I just left that out of my bowl and it was sooo yummy.
