Smoked Turkey Spinach Sundried Tomato Sandwich ~ Sumptuous Spoonfuls #sandwich #recipe

There are times when I’m soooo hungry that it’s hard to wait for the food to get done, let alone force myself to abstain from eating long enough to take a few photos before I inhale my food.


This sandwich was one of THOSE. I made this after going to a power yoga class the morning after a dinner-free evening, which left my body in an intense, desparate-for-food state. Yes, I did have breakfast, but it was just a small one because you do not want to eat a big meal before yoga.

By the time I got home I was rushing to put together a quick something, but this sandwich sounded so good in my head that I just HAD to share it with you. So I forced my hunger to wait while I took a few shots. That was hard. I couldn’t wait to take a bite. And when I finally did … it was just what my body needed that day.

Smoky Turkey Spinach Sundried Tomato Sandwich

  • Prep Time: 10 minutes
  • Cook Time: 5 minutes
  • Total Time: 15 minutes

Ingredients

Scale
  • 2 thin slices of good bread (I used my homemade white whole wheat bread)
  • Thinly sliced smoked gouda cheese
  • Thinly sliced smoked turkey
  • Fresh baby spinach leaves
  • Thin slices of sweet pepper
  • Sundried tomato pesto (recipe here)
  • Butter (or trans-fat-free light butter)

Instructions

  1. Lightly butter one of the slices of bread and set it, butter side down, on the pan you are going to cook it on.
  2. Arrange slices of cheese to cover the bread, then cover with turkey, baby spinach and pepper slices. Take the top slice of bread and spread a good layer of sundried tomato pesto on the bottom side, setting that side down on top of the peppers. Spread a thin layer of butter on the top of the sandwich.
  3. Heat the pan over medium heat, covering the sandwich and then checking every couple minutes until the bottom of the sandwich is golden brown and the cheese is starting to melt. Flip the sandwich and again, watch carefully until it’s golden brown on the other side and the cheese is melted.
  4. Use a spatula to transfer the sandwich to a cutting board and cut as desired. Then set the sandwiches on your serving plates and chow down!
