Another fun post to celebrate #Choctoberfest … and also “International Cook with Your Kids Day” … I think this post is SO fitting … because …


Every morning I make chocolate chip pancakes (with mini chocolate chips) for my daughter for breakfast. I make the batter ahead of time and keep it in the fridge so that it’s really simple to cook up four hot pancakes for her to chow on the way to school. On school days she eats them on our short drive to school. With the chocolate chips in there, there’s no need for syrup so they are a great “on-the-go” breakfast. Lately she’s been folding her pancakes in half, watching the pancakes break, slowly.

I watched her do this and remarked one day at how much they look like tacos when she does that … and then we looked at each other and one of those magical streaks of inspiration sparked between us as we both simultaneously thought that “pancake tacos” was an insanely good breakfast idea … the filling would, of course, be strawberries … and you’d have to make the pancakes a little thinner than you normally would, so they wouldn’t break. Of course you would top it with whipped cream … and daughter said there had to be maple syrup … and I thought there had to be chocolate syrup drizzled over top … and then we had to add a few mini chocolate chips on top, well, just for good measure.

This flash of inspiration happened several weeks ago … we put that idea in the backs of our minds, knowing it was not time yet, but waiting for the time when these pancake tacos should happen. And then, last weekend she woke up and said to me … “Mom … breakfast tacos?” … there were strawberries and pancake batter in the fridge, so I said, “Yes! Let’s do this thing!” … and so my girl had breakfast tacos, pancake style, with chocolate chips and maple syrup and strawberries, for breakfast. It was great fun.

My daughter is 17 now … but I think that this is an ingenious idea to share with younger ones and get them involved in cooking in the kitchen (and the reason this whole idea happened is BECAUSE my kids and I have always cooked together). Young kids could help measure, stir, and assemble the tacos, and have fun decorating their own tacos. I love getting kids cooking in the kitchen. It’s a great bonding experience and it teaches them SO much, even beyond cooking skills … self confidence, communication skills, math, science … and so much more.

Strawberry Chocolate Chip Pancake Tacos

  • Prep Time: 15 minutes
  • Cook Time: 10 minutes
  • Total Time: 25 minutes
  • Yield: 2 - 4 servings 1x

Ingredients

Scale
  • 3 Tablespoons butter, melted

Dry ingredients:

  • 3/4 cup all purpose flour
  • 3/4 cup white whole wheat flour
  • 1 Tablespoon sugar
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt

Wet ingredients:

  • 2 teaspoons vanilla
  • 1 egg
  • 1 1/2 cup milk (plus a little extra)
  • 1/2 cup mini chocolate chips (or to taste)

For the tacos:

  • Chunks of fresh strawberries
  • Light whipped cream
  • Chocolate and/or maple syrup
  • Mini chocolate chips

Instructions

  1. Melt the butter and set aside.
  2. In a small mixing bowl, mix together the dry ingredients, then add the wet ingredients and stir to mix well. Stir in the melted butter, a little at a time, until the lumps are pretty much gone. Add just a bit more milk if needed to ensure a thin batter. Stir in mini chocolate chips to taste.
  3. Heat a nonstick frying pan over medium heat, then reduce heat (if needed) to medium low. Rub a bit of butter over the bottom of the pan, then pour batter in spoonfuls into the pan to make pancakes about 6 inches in size. Let brown on bottom, then flip and brown on the other side.
  4. Set two pancakes on a plate, add a bunch of strawberries down the center of each. Top with whipped cream, syrup and/or chocolate chips as desired.
