Toasted Peanut Butter Banana Dark Chocolate Panini ~ Sumptuous Spoonfuls #sandwich #recipe

Have you ever had one of those days at work where you are so busy you hardly have time to think (let alone eat) and you get home, walk in the door, and you are so hungry, the very first thing you see that’s edible you just latch onto and you’re GOT to have it. NOW.


Well that’s what happened with this sandwich. I walked in the door, saw bread, bananas, and peanut butter left out on the kitchen island and immediately thought a peanut butter and banana sandwich sounded amazing … and then I though “oooh I’ll toast it like a grilled cheese sandwich” … and then, as I was spreading on the peanut butter, the thought of chocolate popped into my mind.

So I took out some fine quality dark dark dark chocolate chips , chopped them up so I could evenly distribute my chocolate across my grilled peanut butter sandwich, and started toasting. The anticipation was killing me … I SO wanted to eat that sandwich, but I also wanted it to be amazing, so I waited until it was perfectly toasted, chopped it up, took some VERY quick photos, and mmmm …

I know, it’s not exactly health food, but it really isn’t BAD for you … it’s got protein, fiber, potassium and all the awesome antioxidants you get from dark chocolate. Besides, it’s kind of like having dinner and dessert all in one. I gobbled up 3 of the quarters with a glass of cold milk (by which time I was full and thoroughly satisfied) … and then, to make up for my decadent dinner, I did 3 miles on the treadmill.

Toasted Peanut Butter, Banana & Dark Chocolate Panini

  • Prep Time: 5 minutes
  • Cook Time: 10 minutes
  • Total Time: 15 minutes
  • Yield: 1 serving 1x

Ingredients

Scale
  • 2 thin slices of white whole wheat bread (recipe here)
  • Peanut butter
  • 1 banana, sliced diagonally
  • 2 Tablespoons dark chocolate chips, chopped
  • Light butter

Instructions

  1. Spread both pieces of bread with a thin layer of peanut butter.
  2. Arrange the banana slices to cover one of the slices.
  3. Top with chocolate chips (as evenly distributed as possible), then the other slice of bread (peanut butter side in). Spread the top of the bread with light butter.
  4. Heat a frying pan over medium heat and flip the sandwich onto the pan so the butter side is down. Butter the top of the sandwich.
  5. Cover and let the sandwich cook for a few minutes, checking it frequently, until it’s golden brown on the bottom. Flip the sandwich with a spatula, cover and cook again until the bottom side is toasty and brown too and the chocolate is nice and melty.
  6. Remove the sandwich, slice into quarters, pour yourself a tall glass of cold milk and revel in the deliciousness.
