This fondue is AMAZING! … Recipe from Tyler Florence

A super-easy melty cheese fondue recipe that will make you feel like a rock star in the kitchen. No complicated equipment required.

Today was a day of Tyler awesomeness, so it seems so perfect to be posting a recipe from a Tyler … it is bonus wonderful that it is epically cheesy and easy to make. This cheesy fondue is so perfect for sharing with friends or family or any gathering where you want to just chill and relax after a crazy day at work.

I had a very stressful day at work today. We were working on getting everything set up for our client’s opening tomorrow. Somehow, some things got pushed to the last minute and we were suddenly responsible for things that weren’t in our camp ever before. I am proud to report that we found a way to make everything happen on time, mostly thanks to my coworker Tyler. He was a lifesaver!

I live in software-land at work. It’s a lot of technical mumbo-jumbo that’s sometimes really hard to decipher. Tyler dug in to figure out how a script (that he had absolutely no experience with) worked and debugged every step of the process until we were able to get everything that the client wanted done executed perfectly. I was stressing out ALL day, wanting everything to come together for our client perfectly and worried that it wouldn’t happen, but Tyler was perfectly calm and cool about it and there for me every step of the way.

At one point, I asked a second Tyler to step in and take a look … and when the first Tyler found the solution, the second Tyler said, “just ask a Tyler … we’ll find a solution” … yeah, I’ve got to say that Tylers (at least those I’ve experienced in my life) generally rock.

Thank you, Tyler S., for coming to the rescue today, and Tyler P. for being ready to step in, and also to Tyler Florence, for this amazing recipe. To me, this is THE quintiessential cheese fondue recipe. It goes well with bread and veggies and … as a sauce on asparagus scrambled eggs. OMG, it’s SO good. And it’s EASY! You don’t need a fancy fondue pot to make it … you can make it on the stove top, but you’ll want to serve it warm, you know, for the melty factor. Because melted cheese is … um. just. so. good.

Tyler’s Amazing Cheese Fondue

  • Prep Time: 10 minutes
  • Cook Time: 15 minutes
  • Total Time: 26 minutes
  • Yield: 4 - 6 servings 1x

Ingredients

Scale
  • 8 oz. Swiss cheese
  • 8 oz. Gruyere cheese
  • 2 Tablespoons cornstarch
  • 1 clove garlic
  • 1 cup dry white wine
  • 1 Tablespoon freshly squeezed lemon juice
  • 1 Tablespoon Kirsch (or other cherry brandy)
  • 1/2 teaspoon dry mustard
  • A pinch of nutmeg
  • Assorted dippers: cubes of bread, chunks of apple, meat, lightly steamed or roasted veggies

Instructions

  1. Shred the cheeses into a bowl and toss with the cornstarch.
  2. Smash the clove of garlic with the side of your knife, pull off the peel, then rub the bottom of your fondue pot (or a saucepan) all over with the garlic. Save the garlic for another use.
  3. Pour the white wine and lemon juice into the fondue pot and heat over medium heat until simmering. Very slowly add in the cheeses, stirring constantly to keep the mixture smooth. Once all the cheese is added and good and melty, then stir in the cherry brandy, mustard and nutmeg.
  4. Serve warm with your choice of dippers.
