I brought this queso to our last family gathering. It’s uber simple, almost embarrassingly so, but they didn’t care. They kept asking, “Ann, where is the queso?”, digging through the fridge to find it, sometimes stirring in some taco meat, warming it up in the microwave and pulling out the chips to munch down more queso. It was very popular, even my sister’s little two-year-old was enthusiastically digging into the queso.


I think I may just give up trying to bring them my marvelous creations and just stick to simple queso dip! Okay, no, not really …I’ll still bring some “fancy foodie food”, but I do need to remember a simple good queso I think, each and every time, at least with MY family. You just can’t top some of the simple joys in life.

Note: if you can’t find Mexican dipping cheese, you can use any good melting cheese and even Velveeta will work. This is so simple, it’s almost crazy, but it’s also addictively good. If your family is anything like mine, they’ll be digging through the fridge asking where it is … You can easily substitute sweet or bell peppers for some of the hot peppers to tone down the heat in this dip to suit your own family’s tastes.

White Bean Queso Dip

  • Prep Time: 10 minutes
  • Cook Time: 10 minutes
  • Total Time: 20 minutes

Ingredients

Scale
  • 1 teaspoon olive oil
  • 1/2 cup chopped yellow onion
  • 23 cloves garlic, peeled & chopped
  • 1 12-oz. package Mexican Dipping Cheese, cubed
  • 1/4 cup milk
  • 24 Tablespoons (or more) chopped hot peppers (use more or less to taste … I used cowhorn peppers, but you can use jalapenos or any hot pepper you choose. If hot peppers are too hot, add roasted or fresh bell peppers, finely chopped, to taste, in place of some of the hot peppers)
  • 1 1/2 cups cooked cannellini beans (or 1 15-oz. can, drained)

Instructions

  1. Heat the olive oil in a nonstick pan over medium heat. Add the onion and garlic and saute for a few minutes until the onion is soft & translucent. Lower the heat to medium low and add the cubed cheese and milk. Stir, then add the hot peppers. Cook, stirring frequently, until the cheese is melted.
  2. While the cheese is melting, pour about half the beans into a small bowl and mash with a fork. Add the mashed and whole beans to the cheese mixture and stir. Continue cooking until the cheese is completely melted and all is nice and warm. Adjust the amount of hot peppers to your liking and serve immediately with tortilla chips.
