Air Fryer Asparagus & Mushrooms

Crisp tender roasted asparagus with a bit of crunch, tossed with juicy roasted baby bella mushrooms all done in the air fryer in less than 10 minutes! This lovely dish makes a beautiful side dish for steak, burgers, chicken, or fish … or a beautiful, filling breakfast topped with a farm fresh egg and a side of whole wheat sourdough, toasted.

Personally (as you might have noticed from the photos), I’ve been enjoying this air fryer delicacy for breakfast (or sometimes lunch, depending on how crazy my mornings go). I work from home, so lately I’ve been tossing this together quickly when I have a little break between meetings on a busy workday. I am super lucky that I have fresh garden asparagus from my parents and farm fresh eggs from my friend who raises chickens. Eggs are so delicious and quick to cook up, when I’m in a hurry, why not enjoy an egg with my veggies and fungi? Especially when you can multi-task and get the egg done while the mushrooms and asparagus are cooking.


I can envision so many other wonderful places for this dish, though. Juicy mushrooms and asparagus are the perfect pairing for steak, chicken, pork, fish or whatever main dish you have in mind. But let’s not stop there. You can also chop the asparagus and toss with pasta and sauce for a lovely plant-based meal. Or why not pair with rice or quinoa? Really the sky is the limit … let this dish be just the beginning to whatever you wish. Or maybe you just want to enjoy the simplicity of it as it is. Four ingredients. Hot, tasty and ready to eat in 15 minutes. What’s not to love about that?

Is Asparagus Healthy?

Asparagus is not only beautiful and tasty, but it’s a powerhouse of nutrition and it’s super low in calories! It’s a great source of fiber, vitamins C, A, K, E and B9 (folate), plus potassium and minerals like iron and zinc. Because it helps with blood clotting, the Vitamin K in asparagus is great for both heart and bone health. Pregnant women also benefit from the folate in asparagus, a key nutrient when you’re expecting. Also, because it’s high in potassium, asparagus helps lower blood pressure. Asparagus also helps strengthen your immune system and reduces your risk of cancer.

Asparagus is also high in water content and a natural diuretic, which can help prevent kidney stones; however, if you suffer from uric acid kidney stones, National Institutes of Health recommends that you avoid asparagus.

Air Fryer Roasted Asparagus & Mushrooms

Description

Crisp-tender roasted asparagus with a nice crunch on the ends along with tender, juicy mushrooms makes a beautiful side dish (or breakfast) in just minutes with a little help from the air fryer.


Ingredients

  • 8 oz. fresh asparagus spears, cleaned and trimmed
  • 4 oz. baby bella mushrooms, cleaned
  • Olive oil (in a sprayer, or you can use a little drizzle)
  • Red Robin Seasoning (or your favorite seasoned salt) and Trader Joe’s 21 Seasoning Salute (or your favorite no-salt seasoning)

Instructions

  1. Preheat the air fryer to 380 F. Clean both the asparagus and the mushrooms, then cut the mushrooms into quarters (if they’re larger) or halves (if they’re smaller). You want the mushroom chunks to all be about the same size. Set them all on a rimmed plate and spritz or drizzle with olive oil. Toss to coat, then sprinkle liberally with seasonings and toss again. I like to give them one more sprinkle and another light spritz of oil again, then one more gentle toss to make sure they all are well coated in oil and seasoned nicely.
  2. Gently pour the asparagus and mushrooms into the air fryer  and shake to spread them out. (If your air fryer basket is small, you might want to do this in batches. It’s okay if they overlap a bit, but you want mostly a single layer in your air fryer, with a little space to let the air circulate.)
  3. Cook at 380 F. in the air fryer for about 6 – 8 minutes or until the asparagus is bright green and starting to sizzle and the mushrooms are cooked through. I like to give the basket a shake sometime in the midst of cooking to make sure they all get evenly cooked.
  4. When done, gently dump the asparagus and shrooms out onto your plate and serve!

Notes

Air fryers vary, so you might have to adjust the cooking time to suit your air fryer. I’ve provided the timing that works best in my Cosori air fryer. If you skip pre-heating, then your cooking time will be longer, but I highly recommend pre-heating! There’s a beautiful sizzle at the start and they cook so quickly and beautifully in a hot air fryer.

This dish is marvelous topped with a farm fresh egg with toast (as shown), but also makes a great side for steak, chicken, fish, or just about any main dish. For a plant-based meal, chop up the asparagus and toss with pasta and your favorite sauce or mix with brown rice or quinoa for a hearty plant-based meal.
