Cara Cara Orange Chicken Goat Cheese Salad

Ingredients

  • For each salad:
  • Mixed Greens
  • 1 Cara Cara orange, peeled and cut into slices (or use a regular orange)
  • Sweet onion slices
  • 1 chicken breast or chicken patty, cooked as you like
  • Goat cheese crumbles
  • About 12 Tablespoons Butter Rum Sweet Spiced Pecans (recipe here)

For the dressing:

  • 1/4 cup low fat vanilla yogurt
  • 1 teaspoon freshly grated ginger (more or less to taste)
  • 1 teaspoon maple syrup
  • A teaspoon or so of freshly squeezed kumquat juice (or cara cara juice)

Instructions

  1. For the dressing, in a small bowl, mix the yogurt, ginger, and maple syrup. Stir in some fresh-squeezed citrus juice to thin to the desired consistency.
  2. Fill your salad plate with greens. Arrange the orange and onion slices on the salad.
  3. Chop up the hot chicken and sprinkle it on the salad, then sprinkle on a few goat cheese crumbles and pecans.
  4. Drizzle the dressing over the salad and enjoy!

Notes

There should be enough dressing for 2 – 3 salads, depending on how much dressing you use on each salad.
