Chia Oat Banana Nut Bread ~ a hearty, healthy banana bread recipe that tastes great!

Chia Oat Banana Bread

  • Cook Time: 1 hour 15 minutes
  • Total Time: 1 hour 30 minutes
  • Yield: 1 loaf (or two mini loaves) 1x

Ingredients

Wet ingredients

  • 3 very ripe bananas, mashed
  • 1/4 cup sugar
  • 1/4 cup real maple syrup
  • 1/2 cup plain nonfat yogurt
  • 2 teaspoons vanilla
  • 1 egg
  • 1/4 cup melted grass fed butter or heart healthy oil

For the dry ingredients:

  • 1/2 cup white whole wheat flour
  • 3/4 cup oat bran or old fashioned oats
  • 1/4 cup chia seeds
  • 1/4 cup flax meal (ground flax seeds)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

Mix ins (optional):

  • 3/4 cup dark chocolate chips
  • 3/4 cup toasted chopped walnuts

Instructions

  1. Preheat the oven to 350 F. In a medium mixing bowl, mash the bananas with a fork or potato masher, then stir together the wet ingredients.
  2. Sprinkle the dry ingredients over, then stir in until well mixed. Add the mix ins and stir again to incorporate them.
  3. Spray a 9×5 inch loaf pan with cooking spray (or use oil or butter), then pour the batter into the pan. Bake at 350 F. for 1 hour 15 minutes or until a wooden pick inserted in the center comes out clean.
