Cinnamon Spice Kumquat Nut Bread


Ingredients

  • 2/3 cup 1 % or skim milk
  • 2 eggs
  • 2 tbsp extra virgin olive oil
  • 1 teaspoon pure vanilla extract
  • 1 cup flour
  • 3/4 cup whole wheat flour
  • 1/4 cup flaxmeal
  • 11/2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon EACH: ground cloves, ground cardamom, and nutmeg
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 3/4 cup pureed kumquats
  • 1/2 cup chopped walnuts and/or pecans, toasted
  • About 1 Tablespoon raw sugar for the top

Instructions

  1. Preheat the oven to 350 F.
  2. In a mixing bowl, combine milk, eggs, oil, and vanilla.
  3. Add the dry ingredients and stir until well mixed.
  4. Fold in the pureed kumquats and toasted nuts.
  5. Pour the batter into a greased 8 x 5 x 2-inch loaf pan and sprinkle the top with raw sugar.
  6. Bake in a 350 degree oven for 1 hour or 1 hour 15 minutes or until a knife or toothpick inserted comes out clean.
  7. Cool and remove from pan.
