Copycat Chili’s Salsa

Ingredients

  • 1 pint of fire roasted tomatoes (or 1 – 14.5 oz. can of tomatoes)
  • 1 – 2 teaspoons chopped jalapeno
  • 1/4 of a medium size sweet onion (about 2 Tablespoons, chopped)
  • 1/4 – 1/2 teaspoon granulated garlic
  • 1/4 – 1/2 teaspoon cumin
  • 1/4 – 1/2 teaspoon salt
  • 1/4 – 1/2 teaspoon sugar


Instructions

  1. Drain some of the juices from the tomatoes into a bowl. Put the rest of the tomatoes (with juices) in a food processor or handi chopper with the jalapeno, onion, garlic, cumin, salt & sugar. Pulse to combine, then blend till smooth. Adjust the seasonings to your tastes and add back in some of the tomato juices if the salsa is too thick. Add more jalapeno if you want a little more kick.
