Easy Avocado Bean Dip

Ingredients

Scale
  • 1 cup cooked beans (or canned – I used my Instant Pot Beans-recipe here)
  • 1 soft, ripe avocado
  • 12 cloves garlic or 1/4 teaspoon granulated garlic (or to taste)
  • 11 1/2 oz. Greek cream cheese (or neufchatel), softened (optional)
  • About 2 Tablespoons finely chopped onion
  • Your favorite salsa, to taste (I used my cilantro almond salsa – recipe here)
  • Salt, to taste, if needed

Instructions

  1. Put the beans into a mini food processor, then cut open the avocado, remove the pit and scoop out the insides into the food processor. Add garlic, cream cheese, onion and some salsa.
  2. Process until smooth. Taste and add more salsa and a bit of salt if needed. Pulse again to mix.
  3. Scoop the dip out into a small bowl and serve with tortilla chips and/or veggies.
