Everything Bagel Triscuit Tuna Melts

Ingredients

  • Triscuits (or other woven wheat cracker)
  • Tuna salad (however you like to make it … we mix albacore tuna with light mayo and mustard, but use whatever tuna mix makes you happy)
  • Slices of KerryGold Dubliner or other good melty cheese (swiss and cheddar are popular choices)
  • Slices of fresh, ripe, juicy garden tomato (or campari tomato – or cherry tomatoes, halved, cut side up)
  • Everything bagel seasoning

Instructions

Oven/toaster oven directions:

  1. Preheat oven (or toaster oven) to 400 F. Line a baking sheet (or toaster-oven sized baking sheet) with silicon baking mat or spray with cooking spray.
  2. Spread a nice layer of tuna salad on each cracker, then top with a cracker-sized slice of cheese. Set on the prepared baking mat. Repeat, setting the crackers side by side on the prepared baking sheet.
  3. Bake at 400 F. for 8 – 10 minutes or until the cheese is melted. 
  4. Remove from oven, top each Triscuit with a slice of tomato (or half-slice, depending on the size of your tomato), then sprinkle with the Everything Bagel Seasoning.  Enjoy!

Microwave instructions:

  1. Prepare the triscuits with tuna and cheese as above, then set on a microwave safe plate. Microwave on 50% power for 30 seconds to 1 minute for 4 – 6 triscuits, watching carefully to see as soon as the cheese is melted. 
  2. Remove from oven, top each Triscuit with a slice of tomato (or half-slice, depending on the size of your tomato), then sprinkle with the Everything Bagel Seasoning.  Enjoy!
