Ingredients

  • 1/3 cup mashed over-ripe banana (about 1 banana)
  • 2/3 cup PBFit (or other peanut butter powder)
  • 2/3 cup oat bran (or rolled oats – quick or old fashioned)
  • 1/3 cup dextrin (like Benefiber … or for higher protein content, substitute protein powder, either chocolate or vanilla flavored)
  • 2 – 4 Tablespoons unsweetened cocoa powder (adjust the amount to the amount of chocolate flavor you like)
  • 2 Tablespoons real maple syrup or honey
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • 1/3 cup roasted peanuts, chopped


Instructions

  1. In a medium mixing bowl, stir together all ingredients. Once they start to come together, use your hands to finish mixing things until when you squeeze it together, the mixture sticks.
  2. If the mixture feels too sticky, add a bit more oats or one of the powders. If it’s not coming together, add just a tiny bit more banana until it does start to stick.
  3. Form the mixture into about 12 balls using your hands to squeeze it together and then roll it into spherical shapes. Store in a bag or covered container in the fridge and enjoy!
