Healthier Mini Monster Cookies

Description

Chewy monster cookies with a healthy twist, but you’d never guess it from the taste! Full of heart healthy fiber, dark chocolate and peanuts, with the colorful, festive little candies that we all love. A definite kid pleaser … the perfect size for little hands!


Ingredients

  • 7 Tablespoons (100g) grass-fed butter, softened
  • 1/2 cup brown sugar
  • 1 egg
  • 1/3 cup peanut butter
  • 1 teaspoon vanilla extract
  • 3.5 oz. (100g) finely grated zucchini
  • 1 1/2 cups oat bran (or quick oats)
  • 1/2 cup whole wheat flour
  • 1/4 cup peanut flour (powdered peanut butter such as PB2) – optional
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup dark chocolate chips
  • 1/4 cup chopped roasted peanuts
  • About 1/2 cup M&Ms or Reese’s Pieces (I used peanut butter M&Ms)

Instructions

  1. Preheat the oven to 350 F (180C) and line a cookie sheet with silicon baking mat or spray with cooking spray.
  2. In a large mixing bowl, cream the butter and brown sugar together until fluffy. Stir in the egg, peanut butter, vanilla and zucchini until well mixed, then add the oats, flours, baking powder and salt and stir until combined.
  3. Now mix in the peanuts, chocolate chips and about half of the candies (save some for the top!)
  4. Form the dough into balls about 1 inch in diameter and set them on the baking sheet, flattening slightly with your hand. Press 2 – 5 candies into the top of each cookie.
  5. Bake for 15 – 18 minutes or until the edges are golden brown. Let the cookies rest for a few minutes on the cookie sheet, then move to a wire rack. Enjoy!

Notes

To spread out the chocolate bits a little better, I chopped my chocolate chips up. You can use mini chocolate chips for a similar effect.
